Oddly when I was pregnant with Charlotte I developed an aversion to the smell of frying chicken. It never went away. I used to love the smell of it and would make it up about twice a month back then. I still recall well how to do several varieties that come out very juicy and very thick crusty. Fortunately my aversion doesnt extend to eating the product though I'm less prone to getting it now. |

My kitchen cleaning hysteria causes me to do all my frying outdoors which eliminates the "frying smell" in the house. I froze the largess of meat I got yesterday because I had a nice hunk defrosting already (I like to freeze as soon as possible as I find the quality better if not left out in the fridge for a day or so first). Then I looked at the hunk today and it was the very dense almost fatfree sort (think layer on one side but no visible marbling) that we make jerky of. I believe the cut is often called 'London Broil' and unless very carefully done to rare or medium rare, it's tougher than shoe leather. Makes a *wonderful* jerky though so will load it up in the dehydrator later. Don did the last set of jerky so it's my turn. (We love each other's methods but they are very different in spicing and marinade tactics). I also have 1 tilapia (Philippenes farm raised) filet defrosted. Not enough for the 3 of us except as part of a mixed dish. I'm thinking of my butter fried rice again with the fish as part of it and some of the cabbage cut finely (have green and purple cabbage onhand). That and some bell pepper and some black olives will do dandy for a side dish. I know. I havent made a batch of adobo chicken in a bit. I have tons of chicken! hit a perfect sale of big family packs for .39/lb and got 7 packs <g>. They are baggied up now (double bagged) in 3 thigh portions. Ok, slight break. Got 10 thighs going. Survey of fridge shows corn on the cob for dinner with it so the rice would be an overload. Will do a fresh lettuce salad instead. I grow my own lettuce so have tons anytime I want it until it bolts (then I just pull it and start another patch in the same container). |

To each his own. I have detested KFC for many years. It is greasy, sometimes the coating is gooey, and generally distasteful to me. Having said that, I remember when their "full service sit down and be served" restaurants were still around and the fried chicken was pretty darned good, despite it not really being "southern fried chicken".
