Default Supper tonight

For a while now I've been craving Chicken Salad...

So today I'll make a large batch of it. My recipe is: mayo, chopped
chicken, celery, walnut crumbs, toasted minced dried onion, sliced radish,
sliced water chestnuts and sliced button mushrooms (usually used as a
filler)...salt and pepper to taste. Occassionally I'll add canned manderin
orange slices.

What's your recipe for chicken salad?

A salad with chicken i make, often, 2 - 3 times a week. Chicken salad
.... eh!...i never liked much of the so called 'chicken salads'
especially with the raw green onions and celery and such.

Now i have on occasion taken a mayo dressing and added it to some
chicken breast meat ... very nice ... but its just a simple mayo with a
crushed clove of garlic, a big dollop of a good mustard and a bit of
vinegar, or citrus juice, all beat together and added to the diced
chicken meat. Im as likely to serve it on a bed of lettuce in an iced
bowl as i am on a cracker or piece of bread.

Well, I'm allergic to walnuts, so I'd leave those out. Sometimes I do
put slivered almonds in ... no onion, it gets too strong - no radish -
no mushrooms.


IOW, mayo, chicken of course, sweet pickle relish, diced celery and
almonds if I feel like it, well-seasoned with salt & pepper. If I had
left-over green pepper, I might put some of that in, diced. I
especially like the celery in it.

The only one I have made recently is large chunks of chicken and
pineapple, celery, water chestnuts, toasted almonds, crunchy
noodles (added at serving time) in dressing made of mayo, lemon
juice, chutney, and curry powder. I was just thinking if I did
this with smaller chunks of chicken and used crushed pineapple,
drained as well as possible, and no noodles, it might be possible
to transmogrify this into a sandwich filling. I find the normal
chicken salad sandwiches to be boring.

I use chicken, celery, toasted almonds, green onion, halved grapes and
dress it with mayo mixed with a little lemon juice or I google for
Chinese Chicken Salad if I don't want to do the one in my recipe box
with hoi sin dressing.

I'd use toasted pecans in a heartbeat.... I'm not "shackled" to those
specific ingredients, I think of them as a starting point (although
almonds are a natural with chinese chicken salad).

Yes, almonds with a chinese chicken salad, absolutely. When you're in the
mood to use the pecans, also try adding bite sized chunks of fresh peaches
instead of the grapes, and use only the very tender white inner stalks of
celery. Sometimes I will combine a small amount of canned whole cranberry
sauce with the mayo for the dressing. A very "southern" tasting chicken
salad.

I think this is a case of the different tastes you mentioned a week or
so ago. I love everything on the list, but there's no way I'd make
that.

No I buy it from penzeys...It is minced onion that's been dried ...then
toasted...too much bother to do myself but a nice flavour additive.

I did make red onion powder once...took 2 days. Slice a red onion
finely...dehydrated it (took about 16 hours) and ground it to dust.

Tasted great...turned into 1 solid lump in about a week and I couldn't
get it outa the bottle; due to humidity and it ain't that humid here.
Bent 2 fork trying to turn it back into powder...had to chuck the bottle
and the powder out. Easier just to buy the stuff.

Although so far this year I've dehydrated some chives and some loveage.
Dried loveage is great in soups and chopping up chives is a real pain.

I'll eat pretty much everything, that combo just sounds off to me.
But if I was at a potluck or something I'd probably give it a try.
Couldn't be any worse than some of the hot dish recipes I've seen.
