looks good. what else do you put on the sandwiches, besides the
bacon, l & T. i love a slice of onion. but then i eat onions with
everything.

I just might give it a try, if I could find the correct cut of pork! I
don't recall ever seeing a pork belly at the 'regular' grocery store
(IGA), but then I never specifically looked. I'll ask the store butcher
the next time I go grocering.

You'll probably have to go to a slaughterhouse or real butcher shop. I've
never seen a belly in the supermarket. City folk just don't know what to do
with them.

I hesitate to say there's ever extra bacon, but I cured and smoked ten
pounds of it. Well, I should say it was ten pounds before it was
cured -- you lose a lot of weight during the curing.

Go to your favorite local grocer. I order mine by the case, usually 40
pounds or so per case. I set aside a weekend just for smoking the bacon once
it's cured.
