Default Last minute dinner changes

Today being Independence Day, we were planning to go over to my BIL's house
so the kids could get some quality time in on the waterslide and we could
bbq together for the first time in what feels like forever. Unfortunately,
at the last minute, they called to say everyone in the house except Shelby,
the eldest daughter, was sick. We definitely didn't want to chance going
over anyway (which was what BIL thoughtfully suggested, believing if we were
all outside there was very little chance we'd catch anything), but he
sounded like death warmed over, so we decided to put it off for another day.

So, early afternoon on the 4th, and no food here for dinner. Thank goodness
Windmill Farm's was open! We picked up some Ahi tuna and some local line
caught halibut, which we grilled along with corn, some yukon golds, green
beans, and pineapple. Not bad for a last minute meal :-)

What did you eat?

Sorry to hear about the ill household! It's no fun, especially when you
have plans with friends/family.

I grilled a couple of burgers and a couple of Italian sausages on the
hibatchi. I miss my Weber kettle! (even if it did seem to be on its last
legs). I definitely have to get a real grill since I'm going to be here (at
Mom's) for a while.

No impromptu party here today. It was a washout with rain. I heard some
fireworks (in the rain?) but didn't feel like going.

cooked for myself some country style pork ribs that I had in the freezer.
Started off par-boiling them then decided to braise them for a while in the
oven. After they got tender I smothered them with BBQ sauce and let them
get crusty and they still fell apart with a fork. cooked some home fries to
go with. Small salad.

I'm glad you had a good time, too, Michael :-) I saw your post about smoked
meatloaf before.. I have to say that intrigues me quite a bit. On my last
trip back east my cousin Dee made meatloaf for dinner one night...first time
I'd had any in years. I'd forgotten how much I like it!

It looks to be another warm and sunny day...so I'm thinking brats and the
rest of the corn on the grill will work out for today. We picked up some
good watermelon yesterday too, so I'll slice that up as well.

We had a very large gathering of expats and visitors all the way down in the
SE corner of Umbria. The nominal hosts are Texans so it was a grilling out
affair with other expats bringing typical US foods as they can be made here
in Italy. They grilled hamburgers and hotdogs.

I was sent upstairs to bake my peach cobbler and apricot crumble -- for 60
people. When I came down, there remained 2 hotdogs, 1/2 cup coleslaw and
that was it. It would appear that my friend who was told to bring brownies
for 60 and I were the only two who had any idea what "for 60" means. A 6
liter bowl of potato salad couldn't fit the description.

So what I had for dinner was a hotdog with some cole slaw on it and a
portion of apricot crumble with whipped cream. Health food.
