Default When USDA Prime is on sale, life is wonderful

I bought some 2-inch thick prime rib steaks on sale yesterday. On the
bone. Actual USDA Prime grade beef.

$10/pound - even being unemployed, I had to get 3 pounds. It
was too good a price to pass up. I also bought some danish blue
cheese for $5.

I grilled them over some Kingsford Mesquite charcoal tonight. Just
did kosher salt and cracked fresh pepper. I cooked them to 122
degrees according to a probe thermometer, and the carry over heat went
up to 140 degrees.

I made my simple steak sauce for it:
- bring 1 cup beef broth to a boil
- add 8 oz heavy cream
- melt in 4-6oz blue cheese

Throw in some seasoned steak fries baked in the oven, a salad with
homemade vinegrette, and a Weltenburger Kloster Asom Bock beer -
heaven. That was better than my last trip to Ruth Chris.

That's a better price than I've seen for USDA Prime grade in years. I
envy you.

I don't envy this. I have a few times topped a steak with a dab of
blue cheese, but it's hard to see how the rest of that stuff would
improve it. To each his own. -aem

A single 2" thick bone-in ribeye would weigh almost 2.5lbs in
itself.

Must have been veal if you got multiple steaks.

A market in my area (P&W) sells prime and choice
(labelled as such with the USDA symbol) bottom round
(often sold as "London Broil"). I had bought a couple of
these in the past at Safeway and was disappointed -
very tough - I'd guess the grade was select or lower.
The P&W version - grilled to medium rare and thinly
sliced - was quite good - I'd do it again. The usual
price is $3.99/pound. The occasional sale price has
recently been $1.99/pound.
