Default Dinner tonight

Thanks to Michael for inspiring me to get off my butt and figure out
what's for dinner tonight. We're having a coconut curry of potatoes,
onions, and chickpeas; eggplant roasted with coriander and onions; and
yellow rice.

Oh, and the teenager and I will have mango smoothies along with dinner.
James hates mangos. I would normally make mango lassi, but turns out the
munchkin is lactose-intolerant (as am I), so I've been trying to go
mostly dairy-free, for both our sakes (with occasional
conscious-and-lactase-enabled exceptions, like the pizza last night).

Sounds lovely, Serene! I love vegetable curries.

I was much too busy and lazy today, though I know that doesn't make sense.

I nibbled on limburger cheese, apples, pears, and crackers during the
afternoon as I was doing a lot of paperwork.

For dinner I had pulled out some homemade pizza dough from the freezer. I
made David a 4-cheese pizza using a Mexican cheese blend. (He will only
eat cheese pizza.) My pizza had a smear of ricotta cheese, halved yellow
grape tomatoes, sliced mushrooms, kalamata olives, shredded scallions, and
some marinated artichokes, all topped with a sprinkling of the same 4-
cheese mixture.

We haven't had any dessert yet, but yesterday I bought a nice ripe
pineapple that I had already cored and sliced. I think I will grill it
brushed with some melted butter.
