with respect to baked goods? I would have been inclined to say
"soft", however, the baking books say that white sugar tends to make goods tender and crisp at the same time, so they can't be opposite. One said that an overly tender product tends to crumble easily, so I'm inferring something like "tender" means to separate easily, maybe as opposed to "chewy". |
