Default caramel popcorn (easy)


I looked at many internet recipes and eliminated the ones that called
for marshmallows. Some called for vanilla, others for peanuts... I
used dark Karo and white sugar, and added vanilla, but I didn't have
any peanuts on hand. It's delicious anyway!

EASY CARAMEL CORN

3 qts. popped corn
1 c. firmly packed brown sugar
1/2 c. Karo corn syrup
1/2 c. butter
1/2 tsp. salt
1/2 tsp. baking soda

½ tsp. real vanilla extract (optional)
½ c. shelled peanuts (if you want that cracker jack experience)

In a saucepan, combine butter, salt, Karo syrup, brown sugar. Stir
constantly until it begins to boil. Let boil without stirring for 5
minutes. Remove from heat. Then put in baking soda and vanilla,
stir. Pour over popped corn (and optional peanuts), stir thoroughly.

Bake in a 250° oven for an hour, stirring ever 15 minutes.

I'd just gotten up. I slept in the living room. The heat has overtaken the
upstairs air conditioning. Gotta find a munchkin on the street to climb up
into the attic to change the filter! I don't fit.

I don't miss those hot and humid nights. Move to San Francisco, the
land of natural air conditioning! No more unbearably hot nights,
comforters in the summer.... and a good nights sleep every night.

I'd LOVE to move to San Francisco! If it weren't the most expensive city in
America to live!

I just made some of this. I added peanuts while putting the caramel on the
popcorn, and baked it @ 225° for an hour (I had to leave the house briefly
and didn't want it to burn). O.M.G.! It was very easy and is *very*
delicious!
I buy candy and confections as part of my job, and we often get samples.
This is way better than any caramel corn I've ever tried, even the "gourmet"
varieties, and it costs next to nothing to make. Freshness matters, too -
who knows how long that Crackerjack has been sitting on the shelf!

I looked up my mother's recipe as this one sounded vaguely familiar. It
actually is identical. The only thing my mother did differently was
sugstituting roasted pecan halves for the peanuts. She didn't like
peanuts. :-)
