Is that like "Buckra Yams"? I have seen sweet orange yams referred to
as buckra yams. What's the difference? Sweet Potato Fries are the "in food" here! Lynn in Fargo Loves all things sweet potato: chips, fries, pudding, pie, candied, mashed, casseroled etc . . . |

In a small saucepan, combine butter, sugar, orange juice, orange rind, cinnamon, and nutmeg. Heat slowly, stirring occasionally, until butter is melted and mixture is well blended. In a large mixing bowl combine yam slices, lemon slices, pecans, and warm glaze mixture, tossing to coat evenly. Butter a 15x10x2 Pyrex baking dish. Arrange yam slices alternately with lemon slices and pecans. Pour any remaining glaze mixture over top. Bake uncovered in center of oven for 1-1/4 to 2 hours, basting thoroughly every 10-15 minutes with glaze in baking dish. Baking time will vary according to moisture content of yams. Yams are done when they can be easily pierced with the tip of a knife and most of the glaze mixture has been absorbed. The remaining glaze should be the consistency of thick honey. The yams may be served immediately or kept loosely covered at room temperature and reheated just prior to serving. NOTE: Raw, uncooked yams should always be used. If your skeptical about the lemon slices, they become completely candied in the baking process. -- Wayne Boatwright ------------------------------------------- Wednesday, 07(VII)/23(XXIII)/08(MMVIII) ------------------------------------------- ------------------------------------------- You can fly, but that cocoon has to go. ------------------------------------------- |

There was a chain restaurant in Georgetown DC named after some financier of the early 20th c. that introduced them to us Eastcoasters. |

I feel deprived - or is that depraved? LOL! Maybe... I've found several restaurants in the Phoenix area that offer either sweet potato fries or sweet potato chips. Whenever I see them I order them. Backin Ohio it was more common than here. Maybe as one reaches the west coast they disappear altogether. :-) IIRC, they were even more common back east. Many places in NYC serve them. -- Wayne Boatwright ------------------------------------------- Thursday, 07(VII)/24(XXIV)/08(MMVIII) ------------------------------------------- ------------------------------------------- I eat Swiss cheese from the inside out. ------------------------------------------- |

They're on the menu at TGI Friday''s but only as a side with certain
entrees. You can order them separately though. I can't figure out what you're supposed to dunk 'em in so I leave 'em nekkid. Lynn in Fargo |

Not recipes, per se, Ophelia, but you can substitute them for white potatoes in potatoes au gratin or similar dishes. They are also good cooked in chunks when added to a roast or stew. They make a good mash, too, as you would with white potatoes. Unfortunately, many folks in the US add a ton of sugar or brown sugar to their mashed sweet potatoes. There is only one way I enjoy then sweetened, and that is in candied sweet potatoes. -- Wayne Boatwright ------------------------------------------- Thursday, 07(VII)/24(XXIV)/08(MMVIII) ------------------------------------------- ------------------------------------------- 'How was I supposed to know he was from outer space?' ------------------------------------------- |

I also have a recipe for them, that TammyM posted for me about 2 years ago. Oven-Baked Sweet Potato Fries 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon ground red pepper 1 tablespoon vegetable oil 2 large (about 1 1/2 pounds) sweet potatoes Prepare the sweet potatoes: In a small bowl, combine cumin, salt, and pepper. Set aside. Preheat oven to 400 degrees F. Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges. In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated. Bake the fries: On a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven. Bake until edges are crisp and potatoes are cooked through -- about 30 minutes. Serve immediately. Christine |
