Default Pork Rectum Recipies?

Anybody have any fresh (now frozen) pork rectum recipes? Do I make
sausage out of them? Use it in some sort of fried rice or chow fun?

Most of what we Amuricans would consider to be waste products are
actually desired food in other cultures. Mostly that type of food is
found among poor cultures in such style that even when they get more
wealth they still desire/need the food that they had become used to over
the generations. Remember: Waste not, want not.

That being said, and coming from a farm family, I don't eat pizzle,
rectums, chitlins, or any other parts that I don't find appetizing.

I've never seen a street vendor, anywhere in the world, selling assholes
on a stick. <VBG>

Why not? It's edible. Our society is such that we only eat the "best"
cuts, but if you had nothing available but an armadillo and were near
starvation, I'll bet you'd eat some strange parts.

I'm not sure exactly how the rectum is cut, but probably not much different
that a rump roast in beef. Makes a good pot roast.

Thanks for finding that. The picture is much more appetizing than the
guy's description. I am very fond of eating 'street food' so it's
more than possible I've had this in Hong Kong but if I did I didn't
know what it was. I would think you could also cook it like tripe, in
addition to this fried rendition.

Growing up, eating strange seafood or animal organs never seemed
remarkable when it was part of a Chinese meal. As a young adult,
though, friends made a complicated French recipe for sweetbreads and
for some reason that struck me as very strange. We humans are
omnivores and you don't have to go very far to find examples.... -

Speaking of which, I killed a big rat on my
front porch yesterday. It had gotten into
the house on Friday night when I left the
door open for ventilation, so on Saturday
I set traps. And in the evening WHAP!
Got him! Tossed the dead body near a creek,
where local scavengers (probably coyotes)
regularly collect small dead bodies.
I used walnuts for bait. One big piece on
the trigger, and then lots of crumbled bits
around the trigger. I squeeze the crumbled
bits to release the oil, in the hope of making
the presentation more attractive.

I just remembered that my maternal grandmother, who as a kid grew up in a
home where German was apparently spoken along with English, used to call
that a (pronunciation only; I have no idea about the spelling)
shtoot-zuh. The oo is the oo in "book" or "look". If I hadda guess at
the spelling, it was probably something like schtutza.

Hog rectums are known in the sausage industry as "hog bungs". Hog
bungs are typically used for liver sausage (liverwurst and
braunschieger), and Genoa salami, etc. Sometimes hog bungs are split
and two are sewn together to create a larger diameter casing...
sometimes they are used double walled. Anyone who has purchased
quality sausage from a real sausagemaker has invaribly handled and
eaten the contents of hog rectum. There is no way the Chinese have
any monopoly on hog rectums, first come the krauts, and the dagos have
a particularly fond penchant for anus. LOL
