There are cream sauces that work well with a pasta salad but ... maybe
'condensed milk' is an acquired taste, like olive oil.

A nice cream sauce, or mustard cream sauce, or even a horseradish,
apple, walnut cream sauce can be very nice with pasta, hot or cold.

It would be safe to say that this is a hoax. The proportions are out of
whack and well, as you say, condensed milk in this context is real
nasty. :-)

Typically after last Sunday mass, at about twoish... set up the saw
horses n' plywood tables in the church side yard. Lay out as many of
the largest disposible aluminum pans as will fit, filled to the brim
with tater salad, macaroni salad, and cole slaw, all with way too much
reeking onion, all with the same watered down soupy mayo dressing.
Don't wanna miss the big sheet pans heaped high with cheap balogna on
cheap white with cheap yallow musturd... more trays the same of yallow
American cheese slathered with mayo. Huge plastic bowls of garden
salad (mostly limp lettuce and more reeking onions). A large pot of
burled to death corn on the cob. Another table heaped with unlimited
wartymel-own wedges. Un-bung the keg of brewski and let the
festivities begin! Ask Sister Schaller, betcha she's chaperoned many
a cheap church feed... probably prepares the gallon jugs of eggs
pickled in beety juice!

It reminded me of those salads you see at big box delis that are
swimming in white liquid and almost look like soup because they have so
much liquid.

Yeah, thanks. Got the general idea from Sheldon. However, isn't that
similar to the sort of meals that organizations like the Red Cross (or
is that the UN?) 'feed the masses' with? As long as it satisfies the
hunger pains and has some nutritional value it can't be *that* bad,
IMHO.

If you're on the verge of starvation, it might be very appealing. If you
have nother choices, probably not.

That's one of the mysteries of American food - maybe it's an attempt to
give you, the consumer, soup AND salad. :-)

Due to my sick mind, I'm more interested in refining this clumsy effort
into something at appears quite reasonable yet results in a total mess.
I won't do it now as I get blamed for too much as it is. However, most
experienced cooks will be able to spot the problems with the ingredients
and the form of this hoax - it's obvious that the originator knows
little about cooking.

The funny thing is that while I'm experienced in the kitchen, I'm bad at
the most common American foods. Macaroni and cheese, potato and macaroni
salad, mashed potatoes. My wife is a poor cook yet she makes a fine
potato salad. It must be in her genes - her family originally had the
name Morey and O'Neal. :-)

Some possible contradictory information, which may or may not
be completely true:

Dairy is supposedly good as part of a gout diet. I have shifted
over to mostly diary-source protein and eat way more cheese than
I formerly did. It is certainly low-purine, except perhaps really
aged cheeses. From a gout perspective, cheese is preferable
to legumes or tofu as a protein source, from what I can tell.

Of course, lowfat or nonfat cheese is healthier. I now tend to
buy a lot of "Celtic Cheddar Lite" from Trader Joe's.

I've got the Cook's Illustrated _Cover and Bake_ book on casseroles. I've
tried half-a-dozen recipes or so from it, and all have been FANTASTIC.
Truthfully, Cooks' Illustrated and I have only differed in opinions on one
thing: oatmeal cookies. (I prefer the Mrs. Fields recipe to the Cook's
Illustrated recipe.)

Really, though, for me it's redundant to have that cookbook, since I buy the
annual Cook's Illustrated hardbound collection of magazines each year. It's
less expensive than subscribing to the magazine, and it's easier to find
recipes in the hardbound collection because there's an index for the entire
year.

The recipes on the TV program all seem to be taken from the previous year's
magazines.

There's no sugar in macaroni salad!! :-)

(James likes a little sweetness in his potato salad -- sweet relish or
something with a little touch of sugar. I don't like it that much, but
occasionally, I'll do it for his sake. He doesn't like macaroni salad at
all, though, so my macaroni salad is always safe from sugary additions.)

Not so with this recipe that you're volunteering to make, however.
Sweetened condensed milk is *extremely* sweet. The other thing that seems
very odd is the volume of "liquidy" ingredients (mayo, condensed milk, and
vinegar) in relation to the quantity of macaroni. I can't imagine anyone
really liking this combination.

It says to refrigerate overnight. Perhaps it would thicken?
(Not that I'm gonna try it!)

Yup. Some of us are luckier than others, I guess. For example, we can
afford to buy beef tenderloin whenever we want to, not everybody can.

In the US, the major distinction is between evaporated milk and condensed
milk. I have never seen a can of condensed milk that wasn't sweetened.

The reaction of the vinegar and the condensed milk would cause it to
thicken...maybe too much. That is also the principle of lemon icebox pie,
which contains lemon juice, sweetened condensed milk, and eggs. It is not
cooked, but the reaction of the acid condensed milk, and egg yolks causes
it to thicken enough to be able to cut it into wedges.

Somehow this reminds me of a 'banana salad' that a friend used to make.
She would take a big bunch of bananas, peel them (obviously) and then
slice them up. She would then drizzle fresh lemon juice all over them
so they didn't go 'brown', and put them in a bowl. Then she would mix a
can of sweetened condensed milk with an equal amount of mayo and pour
this mixture all over the bananas, mixing them gently so they got
covered with the mixture.

It was surprisingly good. And I don't even have a 'sweet tooth'.

Ditto around here, Wayne. However, our evaporated milk is 'runnier' than
condensed milk, which has the consistency of thick honey, IIRC. I
seldom use either to be honest.

I could see that with bananas, but not in macaroni salad.

Yes, same here. Evaporated milk is just that, milk with much of the
moisture evaporated form it. It's approximately twice the density of
regular milk. Our condensed milk is quite thick, like syrup.

Evaporated milk and condensed milk are synonymous. Originally this
product was labeled condensed milk, the evaporated milk designation
came later. Originally there was sweetened evaporated milk... in most
hispanic/tropical markets one finds many more brands of this
product... they're just as likely to be labeled sweetened condensed
milk as sweetened evapoorated milk.... without the word sweetened it's
plain old condensed/evaporated milk. In tropical areas very few folks
use fresh milk, very few have refrigeration at home... in fact they
don't use much canned milk of any sort because once opened they have
no way to store it, so they use mostly powdered milk products, they
even use powdered breast milk; KLIM.

ok, i have to ask... what is the recipe you have for Mrs.
Field's Oatmeal cookies?
i used to work at Mrs. Field's when the cookies were made in-
store & most published recipies i've seen claiming to be hers
aren't even close. i'll admit to being a "bad" employee &
making up my own recipes & putting them out (dark chocolate
macadamia was a big hit. no idea why Debbie never thought of
it)...

Yeah, I'm thinking it's a sort of faux custard, disguised as
a macaroni salad recipe. I've been served macaroni salads that
have way too much mystery glop surrounding the individual
pieces of macaroni. Probably this is one of those.

Hmmm. Maybe, maybe not.

The Cook's Thesaurus has this to say about it:

evaporated milk = condensed milk = concentrated milk
Notes: This is sold in cans, and comes either whole or nonfat.

Don't confuse it with sweetened condensed milk, which has lots of sugar
and is not a good substitute. While evaporated milk is *sometimes*
called condensed milk, *most recipes that call for condensed milk are
referring to sweetened condensed milk*. Evaporated milk is sold with
varying amounts of butterfat, ranging from whole evaporated milk with
about 8% to skim evaporated milk with about 0.5%. To reconstitute
evaporated milk, combine it with an equal amount of water. Substitutes:
half & half OR milnot (available in Britain; whips better than
evaporated milk) OR cream (higher in fat, but works well in pumpkin
