Default Hamburger steak

Last night we had burgers. Stan calls it hamburger steak, I guess when
it's not in a bun it's a steak, oh well. call it what you will they
were great.

If you don't want to bother with the clicking it's blabbed on my blog
also.

I boiled some red potatoes so we could smush them with a fork and top
with lots of hamburger gravy.
http://i33.tinypic.com/t6ytqb.jpg

To the ground beef I added a little salt, pepper and a few shakes of
Worcestershire sauce. Dang, did you know that Worcestershire is in
spell check? cool. After forming the patties they got a good fry in
the skillet.
http://i33.tinypic.com/1pynba.jpg

Since the beef was so lean I had some, but not enough fat to make the
gravy, so I add a hunk of butter to the pan. I know, this defeats the
purpose of buying lean beef, but c'mon we need some gravy here.
http://i37.tinypic.com/2qizi1t.jpg

While the butter was melting away I added some finely chopped green
onion tops. I didn't have shallots or chives so this had to do. It did
just fine.
http://i37.tinypic.com/9j0xvl.jpg

Sprinkled in a little flour to make a roux.
http://i34.tinypic.com/2l902h0.jpg

Once it cooked a little to get rid of the raw flour taste I added some
beef stock and whisked away like crazy.

I almost didn't include this photo, so before you see the photo I want
to explain something. See the extremely dirty pot in the background?
that's the one I boiled the potatoes in and they boiled over. I put a
lid on the pot to bring them to a boil quicker and didn't keep a keen
eye on them.
http://i36.tinypic.com/v4yw68.jpg

Sorry, I didn't get a photo of the finished gravy. Drat!!!!!

This gravy rocks, it turned out soooo good I could have licked the
pan.

I had some have some French Haricot Vert that I threw in the skillet
with some budduh. I cooked them until they and the butter were
browning. Dang, were they good.

The moral of the story is, buy lean ground beef so you can add tons of
butter to the accouterments.

Simple foods like that are *so* good and so comforting. We always called
that hamburger steak at home, too.

Looks delicious!

Repeating what I said in another thread, try the Penzey's Chicago
seasoning: salt, pepper, lemon peel, liquid smoke.

Good move.

Last time I made almost the identical meal I ground up sirloin for the
patties. That let me add the butter, too, and I had a handful of
mushrooms to add to the gravy making. -aem

I add mushrooms to the onions sauteing, then add the beef stock to the
pan with the beef patties, onions and mushrooms
and let it simmer a while and call it Salisbury Steak.
It sure looks good!

Yikes, there's heaps of fat and leftover 'roasty toasty' bits in there to
make gravy. Still, butter does taste good...

Someone said "salisbury steak", but to me that always meant meat mixed with
an egg, some bread crumbs, and seasoning, browned nicely, then simmered in
gravy.
