Default Eagle Brand Sweetened Condensed Milk in Macaroni Salad

Harkening back to the Macaroni Salad thread...

A brief session with Google yielded numerous recipes for macaroni salad that
specifically called for Borden's *Eagle Brand Sweetened Condensed Milk*.
Most also included a significant amount of vinegar and mayonnaise, and some
also include sour cream. Most also include various veggies; e.g., carrots,
green pepper, etc.

I've concluded that all of these recipes yield a sweet/sour salad which some
might find appealing. I prefer mine to be a bit more savory.

Hokey-dokey. I'll try it with the sweetened first. I'm going to the
grocery store today and I'll pick up the ingredients. :-)

Oh, good, I'm glad you're going to try it that way. I have a feeling that
the quantity of mayo and vinegar may significantly soften the sweetness
factor.

I know that I have seen in one of my Junior League or church
fundraiser cookbooks a salad dressing that contains, among other
ingredients, condensed milk and mustard powder. I guess it would be
a sweet and sour, honey mustard type dressing.

The thought is NOT appealing. I am sure I would find the origin
of this in some condensed milk publication.

I searched Borden's Eagle Brand site and could find no recipes for any type
of salad or salad dressing.

It sounds like the old Tomato Soup French Salad Dressing recipe, designed
for a ton of Slaw. The amount of sugar in one can must be astounding.

Not Slaw Mac Salad. I must have slaw on the brain.

I still think its an industrial recipe.

================================================== ====

Betcha dollars to donuts that the sweetened condensed milk is to keep
the salad dressing a bit sticky. If my macaroni salad is made the
night before a BBQ, entombed in tupperware and tucked carefully into
the fridge; the next day the fresh veggies (including cucumbers,
peppers and tomatoes) have made the salad a little soupy. Maybe the
SCM keeps it from getting that way. It's better if made the day
before because the flavors have time to meld but that's not enough
reason to add all that sugar to the salad!

This is but one of numerous "recipes" for making your own sweetened
condensed milk. It does, indeed, have a considerable amount of sugar in it
for the resulting volume.

3/4 cup sugar
1/2 cup water
1 cup powdered milk PLUS
2 tablespoons powdered milk

Combine all ingredients. Heat to boiling. Cook until thick, this will take
15 to 20 minutes. Basic recipe equals one can.

I have some old booklets somewhere. It sounds like just the thing

That's an interesting thought. Now I do wish my booklets were
more organized.
