Default FoodSaver Experiences?

Hi all!

Bob is "on assignment" for a week and I thought I might freeze some of
the summer vegetables we have been getting from our local farmers
markets while he is gone.

Other than meat, I haven't used the FS for anything other than meat.

Would those who have used their FS for veggies and fruit give me some
tips on what worked (or didn't work) for them. I wondered if I should do
a quick blanch, or if there is produce that I shouldn't have to worry
about doing so. Should I season?

In particular I have gotten some beautiful zucchini that I would like to
put up. I wondered if it might get mushy from freezing.

SOMEWHERE around her is the pesky instructional CD that came with the
gizmo, but I hoped I might get some knowledge from those of you with
hands-on experience. I'm a bit lazy, er, time manageable that way. ;-)

It is one of the higher-end models and has the Crush-Proof button, so
maybe squishing won't be a problem.

I will be canning if I ever get any decent tomatoes off of my plants.
Even the markets around here said that the tomatoes are coming on late,
and they haven't been very flavorful either. I have been getting some
pretty peppers on my plants and the rose geraniums and Kaffir Lime tree
are going great guns. Now, if I could just get the tomatoes ....

An Extension Office for UC Davis is in Sacramento and I plan on taking a
pickling class and a refresher course on canning (it's been YEARS and
YEARS since I canned). Gotta make use of the new 23-qt. pressure canner
Bob bought me!

Green beans, chard and mustard greens, I blanch first and then freeze in
serving sizes on a bun pan then put in the FS bag and freeze for long
time storage. Okra I just cut and freeze then bag and vacuum seal.

It has been my experience that zukes and other squash get mushy from
freezing. YMMV

Season when you cook. Check blanching times on the NCHFP site (below).

I paid outrageous sums of money to buy enough tomatoes to make stewed
tomatoes for State Fair competition. Hot weather crops have been 2-3
weeks late here. Grrrr. My tomato plants are pitiful. I have,
however, been picking about 3-4 lovely slicking cukes each week. Just
enough.

People say there's nothing like a homegrown tomato, and I would maybe
put a homegrown cucumber ahead of that.

Are you cooking on a gas stove, Lin? That will make pressure canning a
lot easier, IMO. Be sure to check with the good people on
r.f.preserving if you have canning questions. Or check at the NCHFP
site, http://www.uga.edu/nchfp.

Thanks for that! My mom used to prep her okra as if she were going to
fry it, then freeze in a regular ZipLoc bag. It held up fairly well. We
haven't seen a lot of okra here (NorCal) yet -- and what is out there
has been very expensive.

I didn't plant cukes. We are container growing and I just have so much

Depends....if they are fnatastically good fries, then they need nothing but
a light sprinkle of salt. Sometimes I like them with ketchup, and when I'm
feeling indulgent, sour cream. Mind you, I eat french fries about twice a
year LOL...they just are not good for me, as a diabetic.

My husband and daughter both like malt vinegar, and hubby also likes Cajun
Chef (hot sauce) on his.
