Default Oatmeal Pineapple cookies

I rarely make cookies unless it's for a function or I have something to use
up.

Anyone try to substitute pineapple chunks for raisins in oatmeal cookies?
If so, do you prepare the chunks ahead of time before mixing with the
batter, or do you put them in wet?

I would suggest cutting up pieces of candied pineapple.

Or the not-so-sweet, but sweetened and soft, dried pineapple. Not
the really hard dried pineapple.

.....doesn't sound very appetizing at all .....try Craisins.

I don't think that would work because the chunks would be too moist. I also
don't think it would taste good. If you don't like raisins, you could try
just adding walnuts, or chocolate chips, or white chocolate chips or
craisins.

A good friend hates raisins and my daughter dislikes too sweet cookies
and loves pineapple. I made a big batch of dried fruits cookies,
including dried pineapple for my Christmas givings that went over
extremely well with the both of them. Yes, these few folks of the
left side claim dried pineapple makes an excellent switchout for
raisins in cookies.

Another suggestion would be just adding coconut and walnuts; very good in
oatmeal cookies.

I made a cinnamon bread using frozen white bread dough the other day. I
could not find any raisins so I used a package of dried sweetened
mangoes, pineapples and papayas. The stuff was already cut into cute and
tiny cubes so it was just dumped it on straight from the package. The
pieces rehydrated nicely. It was good, tasty bread and besides that, the
truth is that we may not need yet another cinnamon bread loaf with
raisins baked in this world.

I don't know how well this product would work in cookies - my guess it
might come out a bit dried out and tough but I could be completely
wrong. Your idea is a good one and you should make a batch and see. The
next time I make cookies, I'll try this out without hesitation. :-)

Soak your dried pineapple chunks in rhum or brandy to 'plump' them up a
bit first. Water works too, but pineapple and rhum just seem to go
together naturally.

This is a logical step. However, it's not needed if you are burying the
fruit in bread dough as it gets pretty steamy within the loaf during the
baking process. In my case, I avoid alcohol and would soak the fruits in
plain water or even in boiling water. But first I would just try the
fruits as is - cause I'm really, really lazy. :-)

I've used chopped dried apricots with success- they were pretty good.
I think I also put in white chips.
