Default Soy Ice Cream


Hi folks,
I have a new Cuisinart ICE 25 ice cream maker. I don't use cow's milk
so I want to make ice cream from soy milk.

Lots of recipes online for soy milk but I just can't find one simple
rescipe. I'd like to use No Fat Yogurt with it...so I won't have to
take the probiotic yogurt separately.

Help anyone?

Have you ever actually eaten soy ice cream? I'd rather give up ice
cream than eat that abomination again.

You might have difficulty making decent soy ice cream on home
equipment. You will have better luck using a nut milk (i.e.
almond milk) and augmenting it with coconut/palm oil. Some
people use entirely coconut but I think that makes the coconut
flavor too prominent (nothing wrong with that, but it's not
always what you want). It may give the best texture among
vegan alternatives for ice cream though.

Numerous restaurants make very good vegan ice cream, so it is
possible. Keep trying.

Sara Lewis's book Ice Cool has some soy milk and no fat yogurt recipes.
See link below for one recipe (not sure if that counts as simple).

You're probably right about soy-cream. However, you shouldn't give up on
soy. There's a Chinese restaurant down the street that oddly enough, has
a soy milk custard that's quite remarkable. The custard is a shocking
opaque white with a very soft texture. What it's made of is outside of
my realm of experience since the base appears to be of the most pure and
freshest cream ever. I can't say how the dish is set as it's obviously
not eggs. The custard is served with a mango sorbet and raspberry syrup.
Nice.

I don't give a FF about some imaginary secret stuffed mushroom recipe
but I'd give my left nut to know this one. The owner was the pastry
chief at a great hotel here and he ain't talking.

After some research, it is highly likely that this dessert is actually a
tofu - soy milk that has been coagulated with the addition of calcium
sulfate. The good part is that the end product is not identifiable as
having a soy base. Looks like my nuts are still a couple. :-)
