At a thai restaurant, I ordered Laab and said make it thai hot. It
was really good but so hot. So, the next time, I tried one level below
thai hot, especially with the friend I was with and it wasn't tasty. I
asked the to take it back and make it thai hot and they did and it was
so much tastier. Even my friend said so.He said that there's something
in there that's not the chilli that is in thai hot only. I think it is
fish paste which w/o the hotness would probbaly be too strong and so
they only put with thai hot.

Oh I know of what mean. Its just that as I have gotten older my gut just
cannot handle the heat of those peppers. I miss it dearly though. I used
to eat hot Thai food like the locals did. I miss those days.

I understand. It was just telling my observation. I can't eat that
hot on regular basis but I can manage every so often if it is the
right food, i.e Thai .

Have you tried eating some yogurt (plain) right after eating spicy
food? I wonder whether that would help.

Thanks. Wonderful selection. I came to know how to make Thai food,
i.e.essential ingredients only these past few years. Now, not being to
handle eating white rice, I plan to make dishes like Laab or Thai
basil stir-fried Chicken with , not curry. In fact, these past few
days, I have been looking for Basmatic brown rice _ specifically
"Kohinoor" brand - in the local Indian paksitani stores and they don't
even have any bog bag in brown rice of any brand. I refuse to py
ridiculous price and buy 1lb or 2lb bags.

Any one recommend a good brand for brown rice, Basmati or not?

I like brown Basmati and thats the brand they have in the large burlap
bags in the places I would buy it. I haven't seen it in the two markets
I frequent for about six months. When I ask they shake their heads.

Yield: 4 Servings

1 tb yellow curry paste; (Thai)
1 ts turmeric
1 tb palm sugar or brown sugar
2 tb Thai fish sauce; (nam pla)
2 tb lime juice (original: 1 tb)
1 tb vegetable oil
1 lb boneless pork loin
cut into 3" x 1" x 1/4" strips
OR
1 lb boneless, skinless chicken breasts
cut into 3" x 1" x 1/4 strips
24 8 in bamboo skewers soaked in water for
1 cn unsweetened coconut milk

Combine yellow curry paste, turmeric, palm sugar, fish sauce, lime juice
and oil. Toss meat strips with marinade and marinate for minimum of 2 hours
in refrigerator or better overnight.
Thread individual meat strips onto the skewers, weaving in-and-out, in a
ribbon fashion. Make meat strips lay flat on skewer.
Prepare grill. Medium hot coals. Brush strips with thick coconut cream
(see below). Place (brushed side down) over hot coals for 1 to 2 minutes.
Turn over, brush with coconut cream and grill until cooked. Do not overcook
the meat it will dry out.
Serve with Spicy Peanut Sauce.

TO PREPARE COCONUT MILK AND CREAM: Pour 1 can unsweetened coconut milk into
a tall glass. Allow to sit for at least 1 hour so the thick cream rises to
the top. Skim off top (cream) and set aside. The rest is thin coconut milk.

A few here can cook, they are easy enough to find. They post recipes,
ideas, experiences and try to share the whole cooking experience because
they enjoy it. The rest start flame wars, nasty arguments and will
absolutely amaze you with their childish pettiness and reactionary ramblings
over some sacred cow of theirs not getting appropriate respect. Seldom do
they post anything except to describe what they ate for lunch that somebody
else prepared for them. They will criticize severely for not being
"authentic" because as they say, all of the books they have read, say it
isn't that way. The last ting they will ever do is actually try it for
themselves.

Stay with the first type and you'll be just fine.

I wasn't criticizing her use of the pepper. I was commenting on
Paul's claim that they used an awful lot of pepper. Which they did
roast a lot at first, but only used a modest amount in the actual
dish.

Actually, I thought you meant that the amount of chilli they used for
the meat was too small since this is a Thai dish. That's why I said
that people should figure out their own ratio. I cooked one lb of
meat, putting whatever amount I wanted for the rest of the
ingredients. I also made stir-fried ground chikken w/ basil that day.
I used the two of them alternately the whole week for lunch (everyday)
also with some steam veges and also taking about 1/4 to 1/2 wheat pita
bread to eat with a vegetarian curry (not too much spice actually) I
made with yellow split peas. I also had Thai Tom Yum soup - I eat
this with thin wheat noodle that looks like white vermacelli - though
I didn't take that to work. I also have some egg noodle but this
week, I ate only once so far.

I am going to be making that two thai dishes is every weekend for my
lunch and dinner during the week, and steam some veges for the week +
one vegetarian dish - this week will be the black chickpeas - and one
other soup dish which I haven't figured out what to make this week.

I am stating all this in case the person who wanted some tips on
losing weight comes back and get some cooking idea. Oh, my breakfast
is wheat bread with scrambled eggs - I made my scrambled eggs with
tomatoes only - and 1/2 piece of English muffin and some soy milk. I
also have some cereal but this week, I eat them before going to bed
(if I needed some food).
