Here in Greece you get a pretty big pita with gyros at around 3,50 euros. Going price in Lyon, France is €4.50, meat will be veal possibly mixed
with turkey meat, restaurants tend to display what the meat they use is and whether or not it is halal. In the original Turkish, it is the last syllable that is accented/emphasized. Gyro is merely a direct translation of the Turkish original into Greek. Gyro in Greek actually means round or circle. Therefore the correct translation should have been "gyristo" rather than "gyro" but I suppose making it short and snappy makes sense. It IS after all a fast food. But you haven't eaten döner unless you have eaten "Yaprak Döner" (literally "Leaf Doner") made with thin slices of meat and no mince or that horrible sausage preparation that passes for döner. A good sprinkling of sumac over the döner and the salad filling goes well with it! -- choro ***** PS. Döner and nan bread! But that's sacrilege. But in addition to the Pide (Pida
with an a ending must be the Arabic version of the word), the original envelope flat bread, there is another Turkish flat bread in which it can be wrapped much in the way of Mexican tortillas and "tortillas" have existed since pre-history and certainly long before not only Mexico but Greece and Greeks too. These flat breads are traditionally home cooked on an upturned "saç" (pronounced much like the English word "such") -- similar but shallower than the traditional Chinese wok. In eastern Turkey these breads are known either as lavash or as gozleme though gozleme's usually have fillings in them. Göz means "eye" and therefore gözleme means to watch or "that which is watched" because you really have to stand over them and watch them cook over the upturned saç as they are very thin and can easily get burnt. Of course nowadays you get commercially prepared flat breads readily available in ethnic shops in London. The Arabic version seems to be readily available at most shops. What Greeks do not want to know and what they do not want the world to know, is that they settled in what is now Greece from the steppes of Central Asia, much like the Turks did later. Migration to Greece from Central Asia goes back some 8 millennia.
