Being a born and raised Philadelphian who has never been to Chicago, I
can't compare the two. I suspect Chicago's Italian Beef sandwich is
pretty tasty though.

I visited Chicago in 1985. Never had their famous Italian beef sandwich NOR
their famous deep dish pizza. ((

Two major establishments which you can google for addresses:

Mr Beef
Al's Beef

Many other places such as Portillo's, serve superb beefs.

You order them with or without sweet or hot peppers, and more or less
"wet."

Wet refers to dunking it in the broth in which the meat is cooked.


We have a Philly cheese steak place in Chicago, which a friend from
Philly swears is quite authentic, and the Philly cheese steak was really
a heavy preparation. It was pretty good, though, but hard to finish.
While not at all "lite" cuisine in any way, Chicago beefs can actually
be finished off at one sitting.

Chicago mag just rated Portillo's the best Chicago dog. I don't think
the beef is all that good. I'm not a big fan or his anymore. The dog
is good, but didn't deserve top rating.

The dunking is not necessary. Portillo's doesn't do it. Legend has
it that started with a customer who needed a sandwich in a hurry and
it was dropped in the juice. Being in a hurry he said he'd take it
anyway. All they need is a spoon or two of juice drizzled on them.
Otherwise you've got a big mess that's no longer a sandwich but rather
something that needs a fork and knife. I make my own and serve them
with some juice on the side in a ramekin for dipping.

Why is finishing it important? A little sandwich served from the 3
places you mentioned is more of a ripoff as those corned beef
sandwiches for 15 bucks at the jewish deli in New York.

The best restaurant Italian beef I've had comes from a near west
suburb called Westchester. It's Paul's and is owned by the mayor. A
12 inch beef is only 5 bucks and there's no way I can finish one. We
usually get fries and split he beef. The owner/mayor actually works
the store.

I'm just curious, if you do mail order sandwiches, are they already

It's been awhile since I've looked at Portillo's site so I refreshed
myself. It seems SF is wrong about the 4 sandwich and it actually
makes 8. At $67.95 it's still a lot of money. And 1/4 pound of meat
isn't much of a sandwich. But it's mail order.

You do assemble it yourself. I know people who have moved away and
have done it. They claim it's pretty good, but nothing is going to be
great that's been sitting at UPS for 2 days so I wouldn't recommend
it.

They have instructions for reheating on their site that are pretty
good.

Goomba just asked if I've ever posted my recipe. I haven't. But I
will in a day or so when I spend a little time and type something up.
Stay tuned and don't waste your hard earned money on shipping
something you can make for next to nothing. It's just cheap immigrant
food. Most good comfort food is.

I'll type something up in the next day or so and post to your
attention. It's not rocket science but I'll have to think a bit as I
don't use a recipe. Damsel has a basic recipe in the RFC signature
dishes but it's pretty weak and the result looks nothing like a
Chicago style Italian beef. Hahaboner has already killfiled me for
bringing that up.

Here's one you do NOT want to try. <eg>

Ingredients:

* 3 1/2 to 4 pounds beef roast, sirloin tip or rump roast
* 12 ounces (jar) Italian Giardiniera, drained, less if you want
it less spicy
* 12 ounces (jar) pepperoncini peppers
* 1 envelope Italian salad dressing (zesty Italian)
* 10 ounce can condensed beef broth

Preparation:
Place beef roast in a 3 1/2 to 5-quart slow cooker. Combine
Giardiniera, pepperoncini peppers, dry salad dressing mix, and
condensed beef broth.

Add all mixture to crockpot. Cover and cook on LOW for 12 to 14 hours,
until meat is very tender. Use a fork to shred for sandwiches and
serve with crusty Italian rolls or crusty bread. Serves 10 to 15.

worry about soggy bread, but I'm not sure how they fend off staleness.

Dunking is what is done. Mess is not relevant. I began to like "wet"
when years ago I had a broken tooth. In Chicago, if you serve a beef
sandwish with a ramekin of juice people would think it was a "french
dip" sandwich.

I don't like "wet" bread, so none of it would do for me. In fact, I'm not
too fond of Italian Beef, but I really like a good Philly Steak Sandwich
with grill onions, mushrooms, and cheese.

I've always liked them wet, but not dunked. I want to be able to hold
it. Juice poured on the beef is plenty and the crust remains intact
enough to hold.

I've been doing it for years and there's never been any confusion.
You can also order juice on the side and get a little cup. If you
want yours dipped go for it. I think it's overkill.
