Hold the bunch in your left hand; wield the scissors with your right, and trim the leaves straight into the collander for washing. If you're going to chop the parsley, rinse it well with the stem intact, swing it around to dry it off and proceed as above. Then scrunch it all as tightly as you can and cut with a sharp knife.
