Once you have shelled the little suckers (we put them in a gunny sack in the
driveway and drove over them until they surrendered) here's a cookie recipe that will make it all seem worthwhile. I believe this is my mother's adaptation of a '30s Amish recipe. ALTHEA'S BLACK WALNUT COOKIES 2 cups brown sugar 4 eggs, well-beaten 1/2 cup flour 1/2 teaspoon salt 1/2 teaspoon baking powder 1 pound black walnut meats, chopped Combine sugar and eggs and mix well. Sift dry ingredients and add to sugar and egg mixture. Stir in nuts. Drop by the teaspoonful on a greased cookie sheet. Bake about 12 minutes at 375 degrees Happy shelling. Felice. |
