With the farmer's markets loaded with zukes, I was determined
to make stuffed zucchini. Looking around this morning, low and behold I had all of the ingredients for this, including the walnuts: http://www.rachaelraymag.com/recipes...s/article.html or http://tinyurl.com/5juyes Came out very tasty despite the fact that I, uh ... forgot to include the mozzarella. I wouldn't like it without the nuts, they added a lot to it, but why not pecans? The zucchini I had were a lot larger than I remember, a half was a good lunch. I froze two of the zucchini boats for another day. I'm always happy to find a side dish ready in the freezer. nancy |

One zucchini will be fine for the DH and me. Although, I think he said he wanted to make chili tonight. Translation - I think I might be making chili tonight. Either way, I will be making this soon. Shoot, I wish I would have picked some up yesterday, now. I've got tomatoes all over the place, too. (Hubby has requested more eggplant parm, so I got a BUNCH of fresh tomatoes yesterday. Eggplant parm - it's what's for dinner tonight.) kili |
