Default Zucchini boats

With the farmer's markets loaded with zukes, I was determined
to make stuffed zucchini. Looking around this morning, low and
behold I had all of the ingredients for this, including the walnuts:

Came out very tasty despite the fact that I, uh ... forgot

That sounds/looks good. I have a zucchini in my fridge. And most of the
ingredients. I have pecans not walnuts.

I wouldn't like it without the nuts, they added a lot to it,
but why not pecans?

The zucchini I had were a lot larger than I remember, a half
was a good lunch. I froze two of the zucchini boats for
another day. I'm always happy to find a side dish ready
in the freezer.

I might have to try this tonight. One zucchini will be fine for the DH
and me. Although, I think he said he wanted to make chili tonight.
Translation - I think I might be making chili tonight.
Either way, I will be making this soon.

Thanks, Nancy! This sounds so simple and good. If you can't get free
zucchini at this time of year, you can pick them up at a produce stand
dirt-cheap! Shoot, I wish I would have picked some up yesterday, now. I've
got tomatoes all over the place, too. (Hubby has requested more eggplant
parm, so I got a BUNCH of fresh tomatoes yesterday. Eggplant parm - it's
what's for dinner tonight.)

Oh, I love that. I bypassed piles of gorgeous eggplants this year
at the farmer's market, which I regret.

I couldn't believe it the last time I stopped at the produce stand (it's
actually a market, it doesn't disappear in the winter) - no yellow squash,
no zuc's! Yikes! Publix is obsessed with pre-packaging said squash for me.
I like to select my own.

The aforementioned produce market had eggplants of all sizes and colours (I
really like that lavender shade!). Too much of a hassel for me to work
around the seeds, though. Still, they're very pretty.
