Default Food for the week

Or at least the next 3 or 4 days. ;-) I often dedicate weekends to
cooking to save time during the week. Neither dad nor I mind living on
"leftovers" for a few days depending on what I cook.

Just finished braising 6 turkey legs with fajita seasoning, topped with
4 lbs. of "baby" carrots in the big cast iron pot. I treat carrots now
with some coconut oil, a little salt free lemon pepper and dill weed.

The carrots will be lucky to last 3 days. Dad has a passion for them.
<g> I swear he's gonna turn orange!

I have some other stuff planned, I'll probably cook again on Wednesday
other than breakfasts. Dad still prefers omelets or fried eggs for
breakfasts... and I'll often add some pork steak to that grilled on the
foreman.

It takes a lot of carrots to turn an adult into an Oompa Loompa. But
when my daughter was a baby she loved yellow fruits and vegetables so
much that her very fair skin did develop a noticeable orange-ish tinge.
I freaked but the pediatrician reassured me that it was harmless.
Called it a "sweet potato tan".

<grins>

It is harmless, and reversible. I think the health benefits outweigh
the inconvenience.

The same thing happened to me when I was a baby.

Fill me in on coconut oil. Good or bad? It's high in fat. Hubby
loves Thai food, but it's loaded with coconut milk... more fat. He
doesn't want to reclog that artery.

Coconut fat/oil is considered a "good" fat. At least from what I have
been reading.

There seems to be an increasing number of internet pros for Coconut oil:

And it has better flavor than butter imho. :-d

I am so glad you gave out that website! I was just going to do that.
https://www.drbenkim.com/sunshop/ind...ct_detail&p=60

I have been subscribing to his newsletter for quite a while and find
Dr. Kim very informative. I have been using his coconut oil and
dried coconut, the taste is amazing.

Uhhh, all oil is high in fat. They're all 100% fat.

I'm trying to find unrefined (or only slightly refined) coconut oil.

Dr. Ben Kim's newsletters are cool. :-) You are welcome.
I just get the Lou-Anna coconut oil from the grossery store. It's $3.00
per Liter cheaper than Olive Oil. I still use Olive Oil and Grapeseed
oil too. Depends on what I am cooking, and Peanut oil for deep frying
altho' I'm considering adding some coconut oil to that for the flavor.

The first time dad tasted carrots treated with coconut oil, he asked me
if I'd added honey. :-) That oil tastes SO good!

Good to hear! I've only used coconut oil to harden chocolate and I
thought I was doing a bad thing at the time.

Where do you buy it and what brand? I'm reading you should buy a
brand that is as unprocessed as possible. I've seen one brand
recommended on the internet, but don't know where regular people buy
coconut oil or how processed it is. Can we buy it at Trader Joe's?

Lou Anna at the grocery store. It's with the rest of the oils.
It's around $5.00 per liter.

I used to buy Lou-Anne coconut oil too. It was inexpensive and
pretty good. Comes in a white plastic container and I bought it at
Wal-Mart.. Then there are small glass jars in my local supermarket,
more expensive and organic, forgot the brand.

I have bought a jar of the coconut oil Dr. Ben Kim sells.
That stuff is awesome!! I was not prepared for the taste difference
between The Lou-Anne product and this premium unrefined virgin
coconut oil. Frying chicken breast in it, or shrimp, is delicious.
I sometimes just eat a teaspoonful of it for taste. Yummy!

This oil is obtained by centrifuge separation from fresh coconut milk.
And it was never heated. Expensive, but what a treat!!!

Okay, you've talked me into shelling out for it. <g> I use oil rather
slowly so can probably afford it. A little coconut oil goes a long way.

And for the record, Jeremy is in Houston and has not checked in yet

evacuate.

True, and it doesn't get rancid. If I have to buy 1 or 2 of those a year,
that won't break the bank.

I'm guessing she knows that :-) Also guessing by "good/bad" she meant is it
saturated/unsaturated.

The area affected by Ike is still without power.
I am sure that's the reason Jeremy hasn't checked in.

My daughter and her family live in Kingwood, TX.
She can only use her cellphone (sparingly). But all is
well, and they did have ample time to prepare.

Yes, and that will probably be true for awhile with all the downed poles
and lines. I'm more concerned about another friend that did not
evacuate from Galveston. :-(

Glad she is ok.
We did not even get any rain from it here. I'm near Austin.

A lot of people were rescued from the Galveston area.
I hope you hear from your friend soon!

Ike rode all the way to upstate NY and gave us 50+ mph wind
Sunday night. There were about 100,000 people without power.
