I've learned a new trick very recently - peanutbutter. A little wad in the middle of the patty. And of course, garlic. Cilantro. |

I grind the meat fresh immediately before grilling quickly over a very hot charcoal grill so I get a nicely done outside and medium rare middle. When you grind fresh and grill immediately to meduim rare, there is no need for any seasonings to mask the taste of ground meat that's been sitting around and is badly oxidized. Just put the burger on a good roll with a light dose of the usual condiments (ketchup and mayo), cheese, tomato, onion. |

I have used cleaver to make ground chicken but not beef yet. I am thinking to try. What beef cut do you use to grind? |

I want to eat a good hamburger. I went to Chiil last week and orderd a classic burger with trhe description saying "mustard, etc.) I sat at the bar - it was not quite 11am yet - and the guy didn't even give me a mustard bottle. When I told him (in a sarcastic way) about the description of that particular burger on the menu, he asked me whether I wanted the mustard. So I told him whether he thought I'd be mentioning it if I didn't. I said all this very clamly and so he didn't get mad. And they gave just one slice of tomatoes and I said to with an amusement on my face "what's wrong with the guy in the kitchen?" pointing out about a small slice of tomatoes they gave. he went to the kitchen and the manager came wiht two slices of tomatoes on a plate. I asked the manager the same thing and he said that they ere just following instruction. The burger was totally bland. A total waste of money. |
