I had to think of the beet lovers here. I wouldn't want you guys
and gals to feel neglected.... Baked Spiced Beets Source: American Cookery, January 1941, p. 340 Formatted etc. by Jean B. 4 c medium-sized beets, washed and sliced* 3 Tbsps butter 1 tsp salt 1/4 tsp paprika 1/4 tsp dry mustard 1 Tbsp sugar 2 Tbsps lemon juice 1 tsp Worcestershire Sauce *I guess these would also be peeled, since they obviously will bleed after being sliced? Preheat oven to 350F. Arrange beets in baking dish. Dot with butter. Dust with salt, paprika, mustard, and sugar. Add lemon juice and Worcestershire Sauce. Cover and bake for 2 hours. -- Jean B. |

I assumed, perhaps erroneously, that washing the beets implied that they were fresh--and dirty. Maybe not.
