Default chickpea fries?

The DH is out having dinner with a work vendor at rather fancy
establishment. I took a look at the menu and they have chickpea fries on
their menu. Sounds good to me, so I googled a few recipes - easy enough.
As soon as I get my hands on some chickpea flour I am going to try these
out.

Here's one recipe I found.

Well, hmmm...falafel are made with ground chick peas and lots of spices.
This is made very simply with chick pea flour and water - depending on
the recipe.

I found some chickpea flour from Bob's Red Mill. Tried it in a few
recipes, and finally just added it to the bread dough while it was
kneading. It's got about as much gluten as rye or oats, so what's one
more add-in. It made the best bread, with a nutty flavor.

Of course, I haven't seen the chickpea flour since<:-(>

I just remembered there is a really large Indian grocery not too far
from home. I am sure they sell chick pea flour!
