14 recipes:

Take your pick

Dimitri

# 1

4 tbsp. butter or margarine
2 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. paprika
1/2 tsp. prepared mustard
1 lb. sharp Cheddar cheese, grated
1 c. Ginger Ale or beer
2 eggs, slightly beaten

Melt butter, seasonings and cheese in a double boiler until cheese is
soft. Add Ginger Ale and slowly add eggs. Cook until thick. Serve very
hot on toast points. Serves 6.

2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1 c. milk or cream
1/2 tsp. dry mustard or 1 tsp. Dijon
mustard
1 c. grated cheddar cheese
Cayenne to taste (opt.)

Melt butter and add flour and salt to make smooth paste. Slowly add milk,
stirring. Add cheese, stir until melted. Add mustard and cayenne. Serve
over toast or saltine crackers. Joshua's favorite to make and eat!

1/4 c. butter or margarine
2 tbsp. flour
2 tsp. dry mustard
Dash of cayenne
2 tsp. Worcestershire sauce
8 c. (2 lbs.) grated sharp Cheddar
cheese
1/4 tsp. paprika
4 whole eggs, slightly beaten
1 c. stale beer or ale

Melt butter in top of double boiler. Stir in flour, blend well. Add ale
or beer slowly. Cook, stirring constantly, until sauce thickens. Add
mustard, cayenne, paprika and Worcestershire sauce. Mix well. Add grated
cheese, continue to cook until cheese melts, stirring occasionally. Stir
eggs while adding a little of the hot mixture to eggs, then stir the cheese
mixture while adding the eggs to it. Serve immediately. Makes 8 servings.

In the top of a double boiler melt 1 tablespoon butter. Add 1 cup beer.
Cook over hot (not boiling) water until beer is warm. Stir in 1 pound
grated Cheddar cheese until it melts. Stir in 1/2 teaspoon dry mustard, 1/2
teaspoon paprika, 1 teaspoon Worcestershire sauce and salt & pepper to
taste.

"French Welsh Rarebit"
10 oz. extra sharp cheddar cheese
1 tsp. paprika
1 egg, slightly beaten
1/2 tsp. cayenne pepper
Pinch black pepper
1 tsp. Worcestershire
1 tsp. dry mustard
1/2 can beer
French bread slices, toasted

Grate cheese into a double boiler. Add cayenne, paprika, mustard. Add
beer slowly as cheese melts. DO NOT BOIL. Whip in the egg and
Worcestershire to taste.

2 lbs. American cheese, diced
1 tbsp. butter
1/2 tsp. salt
1/2 tsp. paprika
1 tsp. dry mustard
Few grains cayenne
1 c. beer
Toast, bread croustades, or crackers

Melt cheese and butter in double boiler; add seasonings, then beer,
stirring constantly until smooth. Serve on toast, bread croustades, or
crackers.

4 c. fine stale bread crumbs
3 c. milk
1 lb. diced American cheese
1 lb. diced New York State aged cheese
Salt & pepper
2 tbsp. A-1 sauce

Soak bread crumbs in milk in top of double boiler. Place over hot water
and add cheese. When cheese has melted, stir well. Add dash of salt and
pepper A-1 sauce. Serve on hot toast. Serves 10 to 12. Sasanqua Garden

Melt in double boiler 1 tablespoon butter. Stir in and melt 1 1/2 cups
diced Velveeta cheese. Add: 1/3 tsp. salt
1/4 tsp. dry mustard
1 tsp. Worcestershire sauce

Stir in slowly 1/2-3/4 cup light cream. When mixture is hot, remove the
pan from heat. Beat in 1 egg yolk. Serve at once over toast points or
crackers.

2/3 c. milk
1/4 tsp. Worcestershire sauce
Dash of salt
Dash of pepper
1/4 tsp. dry mustard

Melt cheese over hot water, slow, add milk and stir until smooth add
seasonings. Serve on toast. 4 servings. Sandy Barton

8 oz. cheddar cheese, grated
1 tsp. Worcestershire sauce
2 tsp. flour
4 slices bread
1 tbsp. butter
1/2 tsp. dry mustard
4 tbsp. milk, beer or white wine
Few grains pepper

In saucepan, combine cheese, butter, Worcestershire sauce, mustard, flour
and pepper. Mix well with chosen liquid. Stir gently over low heat until
melted, cool while toasting the bread. Spread mixture on the bread and
brown under the broiler. Serves 2.

3 tbsp. butter
3 tbsp. whole wheat flour
1 can beer, at room temperature
1 lb. Cheddar cheese, grated
1 tsp. dry mustard
1/2 tsp. prepared horseradish
A few drops of Tabasco sauce
Black pepper

Melt butter in medium saucepan, whisk in flour and dry mustard. Lower
heat and cook, whisking 5 minutes. Whisk in beer, cook and whisk 8-10 more
minutes, or until thick. Add all other ingredients and cook over very low
heat 8-10 minutes, stirring with a wooden spoon. Serve over toasted bread
or English muffins.

# 12

1 lb. sharp cheese
2 eggs
3 tbsp. Worcestershire sauce
Red pepper
2 tbsp. cornstarch
1 (12 oz.) can dark beer
1 tsp. dry mustard

Melt cheese in top of double boiler. Make thickening of cornstarch in
water. Beat eggs with Worcestershire. Add cornstarch, eggs, beer and
mustard to cheese. Beat with rotary beater until smooth. Add red pepper to
taste. To serve: Chop onions and cover with cider vinegar at least 2 hours
before serving.

1/4 c. margarine
1/4 c. flour
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. Worcestershire
3/4 c. milk
3/4 c. beer
2 c. (8 oz.) shredded Cheddar cheese

Combine and melt everything together in a small double boiler. Serve on
toast.

AUNT ALICE'S WELSH RAREBIT
3/4 lb. sharp Cheddar cheese
2 tbsp. melted butter
1 c. milk
1 c. milk
1/2 tsp. mustard
2 tsp. Worcestershire sauce
Dash red pepper
1-2 eggs, beaten

Melt cheese and butter in 1 cup milk. Combine milk, mustard,
Worcestershire sauce, red pepper and beaten eggs and beat with beater or
blender until smooth. Add to melted cheese sauce. Stir and cook until
mixture thickens. (Add 2 tablespoons flour diluted with milk if thicker
rarebit is desired.) This was another WW II meat-substitute favorite. We
usually had this on Sunday nights followed by Fibber McGee & Molly and
Charlie McCarthy and Edgar Bergen and, of course, Jack Benny. Sunday nights
listening to the radio was accompanied by popcorn and candied apple!

Cool, thanks for the post. My mom used to make what she called Welsh
Rarebit way back when. I think her's was something like

1lb velveta
1 cup of milk
6 eggs

heat the milk and cheese in a sauce pan until the cheese has melted, add
the eggs and stir the whole mess until the eggs are cooked, serve over
toast.
Where she came up with this I have no idea, although it was a
favorite of mine back then. Looking at it now....Hmmmm.

What's not to like? I will try it at half recipe for two. And not often.
Thanks for this. I might put in some chopped crisp bacon, because the
cholesterol level seems low.

My mom would often make grilled cheese sandwiches that included a slice of
tomato.

Presumably, you could just as easily put tomato slices on the toast before
putting on the rarebity sauce, or perhaps on top of the rarebit sauce.

No but the symptomology is very close and the initial diagnosis was very
similar to RSI.

Just a thought for the future if there is no improvement in the RSI.
