Default Raw milk, and cheese

The cheesery that I just did a blue cheese making course at has just gained
Australias *first* licence to make a raw milk cheese for public sale.

Prior to this, Nick was making it just for his own personal, and friends,
consumption.

I've tasted his raw milk cheese (C2), and a one month old (C2) cheese has
the same flavour and maturation as a 3 month old pasteurised milk C2.
