I think I've got some lamb stew meat in the freezer. I don't really
want stew...

Will a countertop Nesco oven work for cooking shiskabobs if I put them
directly on the rack and cook at 450°? (this is one of those convection
ovens with a high velocity blower in it; I don't remember what they are
called)

What for the marinade, maybe a mixture of lemon juice, red wine,
marjoram, garlic, and olive oil?

You have the marinade, but what you need is decent meat. Stewing lamb is
for..... stewing.

Try dropping the Marjoram and subbing Greek Oregano.

Also don't soak as in Marinating just moisten and let rest for a day or 2.
