It's really a coincidence that you should mention this. When we lived in
the Cleveland area, we used to frequent a corner Greek joint that had
wonderful pancakes. What I remember most about them was that they were not
overly thick, were very tender, and very golden on the inside. I knew they
were probably from a mix, but never knew which one. Only after moving to
AZ did I wish I had asked what they used.

This might be the same, although not thet buckwheat variety, the plain one.

Nothing wrong with a good weed. The only thing wrong with wild
strawberries is that they are so small.

Milkweed pods are good too.

We've got wild strawberries all over the place. They are edible in that
they won't kill you if ingested, but they're awfully small, seedy and
sour. If I'm going to take the trouble to pick wild berries I'd much
rather have blackberries.

You're kidding, right?
We used to pick wild asparagus that grew near the railroad tracks near
us. Wild-fruit-harvesting is a great summer pastime in the northern
part of the state here -- blueberries, blackberries, raspberries, plums.

I opened a pack of Target's Blueberry Whole-Grain (Market Pantry
brand?) mix this morning. finding the blues was a trick but there are
lots of seeds in it -- flax, etc. I added a small handful of walnut
bits to the batter. Nice.

You're familiar with a wider variety of pancake types/styles than I am;
all we ever had were basic ones, or buckwheat. I've never had cornmeal
pancakes (they sound tasty, so I think we'll have to try them
sometime!), and the first I ever encountered an oven pancake (didn't
know they were called Dutch Babies -- thanks!) was an early 80s episode
of the Frugal Gourmet. I've made crepes plenty of times, but think it's
time to expand my repertoire -- thanks for the inspiration :~D

You're welcome!

Here is one recipe for Dutch Babies. There are many variations, many with
fruit additions.

Dutch Babies

4 tablespoons butter
3 extra-large eggs
½ cup all-purpose flour
½ cup milk

Topping:

4 ounces clarified butter
Juice of one lemon
½ cup powdered sugar

1. Preheat oven to 425 degrees. In a 10- or 11-inch cast-iron skillet set
over low heat, melt 4 tablespoons butter.

2. In a blender, combine eggs, flour and milk until smooth. Pour batter
into skillet over melted butter, then bake 25 minutes.

3. As soon as the pancake comes out of the oven, pour on clarified butter,
then sprinkle on lemon juice and powdered sugar. Serve at once.

I always make them from scratch. It takes very little time and the
results are much better than any mix I have ever had.

In general, Dave, I agree with you when it comes to ordinary pancakes.
However, I have never been able to duplicate the type of pancakes or
waffles I get using Carbon's Golden Malted Waffle & Pancake Mix. I try to
keep that on hand and storedin the freezer. I also keep a box of Aunt
Jemima Original Pancake Mix in the freezer, especially for David. He
particularly likes them. If I'm making some other type of pancake,
involving a different flour or meal; e.g., buckwheat, cornmeal, oat, rice,
etc., I alaways make them from scratch.

Though it's not part of this thread, I actually prefer good homemade
waffles to pancakes, however, most of batters can be applied to both.

I found the plain / butermilk Krusteez to be only average, while the
honey wheat is very good.
