Default Food for the week

I don't have a lot of time during the week to cook anything but quick
stuff like eggs and salads, and maybe some quick meats on the electric
grill, so tend to cook a lot on weekends for the week. Both dad and I
have no objection to leftovers... 7 to 10 days is my max for cooked food
for food safety.

I finished a batch of Jelly loaf for dad late yesterday that will last
him the week, (he loves the stuff and it's an easy way for me to stuff a
lot of good nutrition into a single dish, for him; this weeks batch was
made with beef shanks with marrow, veggies, shitake powder, and a mix of
trotter and chicken foot stock with extra garlic) and I just started two
racks of beef ribs in the table top roaster for myself that will last
the week. When that is done, I have a 3lb. bag of carrots I'll roast
for both of us. I bought those two racks of ribs about 6 months ago
when I found them for $.69 per lb. Now I can't touch those for less
than 3 times that price. :-( I should have bought more...

We eat a lot of leftovers with simple salads. Works for us. :-) There
are also 8 hard boiled eggs left over from making dad's jelly loaf that
I can eat as is, or add to salads...

I also pressure cooked some trotters for my collagen needs this week.
Wal-mart was out of chicken feet.

Anyone else cook mostly on weekends?

"Never on a Sunday!"

I don't know didly squat about jelly loaf or chicken feet. Must try,

I try to get most of it done on Saturday but since I work night
shifts... <g> Some of it gets done on early Sunday, then I go back to
sleep. ;-)

Right now I've got "Man On Fire" on the DVD queue.

For Jelly Loaf, google for "calves foot jelly". I make variations on
the basic recipe using those, or trotter or chicken foot stock. It seems
to help dad a LOT with both energy levels and short term memory. Also
helps somewhat to prevent his occasional dementia episodes. Not sure
what the mechanism is, all I know is that it works. He craves it now
that I've started making it a regular dietary item so I see no reason to
stop. It's not that complicated, just a little time consuming. Last
weeks batch was fortified with beef heart puree. Good thing too as he
had a really bad paranoia episode. It subsided after about 3 days.

I've been eating a lot of chicken feet now for the past three months due
to some serious back issues. I'm semi-disabled at the moment and am
trying to reverse it. Both the Ortho' and the Chiro' say I can't. I
want to prove them wrong if I can. The last two disks on my lower
lumbar spine (L-4 and L5) are essentially gone. Bone on bone pinches a
lot of nerves to the legs.

I know I'm not in nearly as much pain now as I was at the end of April.
'course the EMS unit helps somewhat too. <g> Better than pain drugs.

So as a result, I have a LOT of collagen rich stock I need to dispose
of. The collagen rich diet has done wonders for my skin, hair and
fingernails over the past 3 months if nothing else! I started it in
June once I found out about the degenerative disk disease and
non-operable lumbar scoliosis that was causing this mess.

As you can see, the sacral plate is crooked causing a pelvic tilt. I
have to work not to walk with a limp. Only do so when it hurts. ;-/

Bite me babycakes. <g> I'm only 46 so this really sucks, but working in
health care gives one some perspective. I've not missed a single day of
work since that bad fall in April that started all of this mess. :-P

You guys have carb restrictions, right? Because I was going to say a pot
of rice or pasta takes as little time to throw together as a big salad,
but if you're not doing carbs, it's a different story. However, boneless
chicken, many soups, and other yummy dinners are quick fixes.

Depends. Yesterday was leftovers, but today is a big meal of Ox Tails.
Often Saturday is a quick meal if we were out for the day or doing work
around the house and little energy for cooking. Not much else doing so we
have the time.

OTOH, my wife is home every day so she can cook a decent meal most days. We
often cook in some quantity with the intention of having leftovers for
lunches or a second dinner. Friday was roasted chicken, yesterday was
leftover chicken, lunch today was chicken sandwiches. Not bad for a $7 bird

You're obviously managing your limited resources very well, Lynn, something
to be proud of. I'm not sure how well I would fare under similar
circumstances. I'm not a good manager, but I guess one must learn to be
when put in that position. Kudos to you!

$3.79 per lb. ;-(

I often wish I did not have to work, but I've also learned to be careful
what I wish for. <g>

Nah, I'm retired, I cook whenever the heck I get the urge.

I went out to the garden today and found some undersized critter
bitten bell peppers. I wanted some onion but all I had was a dozen
red onions from my neighbor's garden, and a sackful of his garlic
too. So I hacked it all up and did a saute, not sure what for but
since I have some ham and plenty eggs I'm thinking a Denver.

Well, wouldn't that depend on the amount of your disability income and
your debts? I think Social Security Disability is more than enough,
and if one gets a small income from an employer's LTD there should be
plenty to live well, so long as one doesn't waste their money on
nonsensical things, like gambling, boozing, illict drugs, and shooting
guns.

I'm no a fan of hot peppers, but I certainly have more than enough
still growing for any ten chili heads. They were supposed to be
Italian frying peppers but more often than not I've found pepper seeds
mislabeled.

I only do one of those. <g> I have 3 years left on the morgage, then it
might be feasible.

I'm not disabled enough yet tho' to quit working and I hope it does not
get to that point. That's the whole idea of seeing a GOOD chiropractor.
He did something different last week and I got a tremendous amount of
mobility back after only a couple of hours. Fastest it's ever helped.

I'll ask him to do it again when I see him this Tuesday...

and I'll keep swimming.

There is that. My daily commute is 36 miles per day round trip at 21
mpg.

The store is close enough to ride a bike too.

If the morgage was paid off, I might consider it, but I'm really not
disabled enough to quite working. I see no reason to do so yet. So what
if it hurts? I can live with the pain...

That's what my EMS unit is for. :-)

Working in health care gives me a perspective too. There are a hell of a
lot more people in worse shape and more pain than I am... I can still
get around on my own.

I'd rather not give up my independence. Not yet.

And I'm trying to reverse it. I'd love to prove my MD's wrong. <g>

Not true. I don't hate guns or shooting. I hate hunting.

If one can afford the *sport* of shooting, fine... but it's expensive
to buy guns, ammo, and range fees ain't cheap (neither club dues),
neither is traveling to shooting ranges and buying ear n' eye
protection and other paraphenalia... if you're having a tough time
making ends meet then shooting is a *nonsensical* _expensive_ pastime
for YOU.

Hunting, no one hunts anymore... they buy laser guided firearms/night
vision scopes, they go through the woods wearing high tech sneak
clothing that costs more than a whole year's school clothes for four
kids, they use expensive ATVs and many thousands of dollars worth of
assorted equipment... that's not hunting, it's not any kind of sport,
anyone peruses a Cabela's catalog can't dispute it's plain old MURDER/
WARFARE!

There is no way murdering a deer suppliments ones food bill for less
than meat from the stupidmarket... after tallying all the expenses
iterated previously (and there are many more) the few pounds of lousy
meat from *one* stinkin' deer (and there are limits, ususally one, you
can't just kill all you want) is the most expensive item in the
freezer, and often it never gets eaten... wild game tastes
disgusting... all commercialy sold venison in the US must be farmed,
by law... even farmed venison doesn't taste so great, your kids who
are used to golden arches boigers won't eat it.

You claim you carry a concealed weapon for protection and in the same
breath you claim how poor you are... no one is going to attack you,
not unless you have four hooves and it's rutting season.

Living in Fargo is a choice. You obviously feel it's worth it, can't
be just all those negatives you focus on, there must be many positives
too.

People make many bad choices throughout their entire lives, they don't
get erased in one fell swoop as a reward at retirement. There are
things we don't get to choose but in this free society most are
choices... what it comes down to is we make our own beds.

That's because you didn't work (still don't work, and have no desire
to ever work) and you're much too young for retirement. I know two
disabled people in particular who are over 65 and suppliment their
fixed income by working from home on their computer... one does very
well
ebaying, the other does even better as an on-line black jack dealer
for a gambling web site. When someone wants to work there are plenty
of opportunities, anyone who is capable of usenetting has no excuse.

SS is not and was never intended to cover all ones expenses, it's only
meant as a suppliment... you're supposed to amass your own funds for
retirement over your entire lifetime... being a poor money manager is
no excuse whatsoever, some hire a money management specialist but any
bank will figure out your budget and guide you for free.

You're supposed to socialize with those who made a success of their
lives and be open to learning from them. But when folks instead
choose to hang with like losers who comfort each other with their
group poor-me whining workshops then they are way beyond salvation.
You obviously don't value success, you place more worth in failure.

You don't live near South Austin where carjackings are up. I have a
good friend that lives there that has been mugged TWICE in one year now.

I've never hunted a deer... but have accepted free deer from those that
own local land and offered it to me. Makes good sausage.

My target practice is limited to what I reload.

My range fees are $75.00 per YEAR at dietz's outdoor range.

It is actually a relatively inexpensive sport. The lead I glean from the
pistol berm pays for it at the recycler. ;-)

And I've never once said I was poor. Only that finances were tight due
to the current cost of energy...

be more acceptible to you were I to respond with disingenuous
Duh'Wayneisms... seems you and Duh'Wayne derive great pleasure from
other's stupidity because you somehow feel their greater failure than
yours elevates yoose, that's just plain selfish. I try to help people
to help themselves, not by offering sorrowful pity. Your ****ing on

Thanks, Kat. I'd like to see him live one day in my shoes. Oh, I can't
wear shoes anymore. My feet are too swollen. Wish me luck on my blood
