Default breakfast this weekend

Well, since I won't have computer access over
the weekend I thought I'd get in ahead of y'all
for once instead of posting after the fact. ;-)

So, this weekend it's potato cheese pierogi (half-moon
shaped not the abominable triangular pierogi wannabes)
fried with dice bacon and served with my special mix of
1/2 ketchup (Heinz, of course) and 1/2 Mae Ploy Thai
Sweet Chilli Sauce. (I recently stocked up on pierogi
from a local place that makes really excellent ones.
I got 6 dozen and divided them up into meal-sized
portions (8 pierogi) and put most of them in the freezer
for later left some in the fridge for last weekend and
this weekend.)

These will be accompanied by freshly squeezed orange
juice. (I haven't had any fresh oj for about 2 years
because I have not seen any Valencias in the stores
in that long. Imagine my surprise and joy when I got
a flyer for one of my local supermarkets that advertized
4-lb. bags of Valencias on sale at 2 for $5! I rushed
right out and bought 4 bags. I am in 7th heaven! I'm
going to drown myself in freshly squeezed oj!)

Sorry, Kate, but this sounds like an abomination and an insult to a
pierogi.

Now the rest of the meal, without that, sounds wonderful!!!

Default breakfast this weekend

For breakfast, we had gluten-free pancakes.


Gluten-Free Pancakes

2 cups gluten-free flour mix
1 tablespoon baking powder
1 tablespoon sugar
½ teaspoon salt**
1 ½ cups milk
3 eggs
4 tablespoons vegetable oil

Add ingredients to a bowl and mix well.. Heat a pan on medium, add
cooking oil. When the pan is hot, pour batter to form pancakes. Wait
until the bubbles start turning into holes, or the pancake will be hard
to turn. When other side is cooked, transfer to plate and serve.
