My mom gave me this- it comes from a photocopy from Food & Wine, Dec
2005 Chocolate & Whiskey Liqueur 1/2 cup light corn syrup 1/4 cup water 1 vanilla bean, split, seeds scraped 4 oz bittersweet chocolate, chopped finely 1- 14 oz can sweetened condensed milk 1 cup half and half 1/2 cup heavy cream 1 cup Irish Whiskey In a saucepan, combine the corn syrup, water , and vanilla seeds and bring to a boil. Add the chocolate and whisk over low heat until melted. Transfer to a blender & let cool for 5 min. Add the condensed milk, .5 & .5, and cream and blend. Pour the mixture into a bowl and stir in the whiskey. Blend the mix in small batches for 30 sec. Pour into bottles and refridgerate overnight- keeps up to 2 weeks in fridge(yeah, right)!! My notes: I've used chocolate chips and vanilla extract with success. Of course, some really good chocolate is best...Also, you can use vodka for a more neutral flavor, but we like Ezra. The mixing directions are kinda stupid, too- I just whisk it all together and it's fine. This is a fave for the holidays, and if you can keep it around, it makes nice gifts, too. Enjoy! |
