Acckk!!!!!!!!!!!!!!!!
I totally spaced on starting my cranberry beans soaking last night. I know that it isn't absolutely necessary, but I usually do it. Okay..what is the method to quick soak/cook them? I never use it, so I forget what it is. I want these for the minestrone.... Christine |

How much soup are you cooking... unless you're gonna cook like a 12-16 quart potful of minestrone a pound of dried beans is overkill. I wouldn't cook dried beans for soup unless it's a bean soup... for the small proportion of beans in minestrone canned beans are the way to go... one 1lb can is plenty for 6qts of minestrone. Save your nice cranberry beans for a bean dish. |
