Default Recipe: Raw Apple Cake

It has been a while since I've posted this. 'Tis the season.

€ 2 cups diced unpeeled apple
€ 1 egg
€ 1/4 cup vegetable oil
€ 1 cup sugar
€ 1 teaspoon vanilla
€ 1 cup flour
€ 1 teaspoon soda
€ 1 teaspoon cinnamon
€ some nutmeg, ground cloves (optional)
€ 1/2 teaspoon salt
€ 1/2 cup chopped walnuts

Mix together apples, egg, oil, sugar, and vanilla. Sift dry ingredients
together and add to wet mixture along with nuts. Just mix it up. Batter
is very stiff. Press into greased and floured 9² round baking pan. Bake
35-45 minutes at 350°.

While still warm, glaze with a mixture of butter, powdered sugar, and
milk.

Notes: I got this from a dear neighbor nearly 40 years ago. It's
pretty simple to mix up.

Sounds yummy. :-) I wonder about using Splenda in place of sugar???

Terribly.

I managed just the same and muddled my way through it.

I almost didn't get any! My two huymahn vacuums (teenangsters)
came downstairs as the sucker was cooling on the rack and
Hoovered a huge section up!

It's good. No, it's very good. I tried to shame Rob from a second
piece with The Look. So much for The Look. Use a tart apple and don't
cheat on the salt and do include the nuts unless you've a good reason to
omit them.

Whaddaya mean vague! JAYzuzz! Just a titch of ground clove and a
little more of nutmeg. :-P What I actually did was give a shake of
the cloves (spice bottle small-hole-shaker shake) and a couple shakes of
the nutmeg.

My glaze is made from a couple tablespoons of butter, maybe a tablespoon
of sour cream, powdered sugar, a pinch of salt, a tablespoon of sour
cream, some fresh lemon juice and some half and half.

I'd be real careful of 1/8 tsp ground cloves. A little of those/that
goes such a long way. Thank you, though, for trying to quantify it for
Ranger. He's kind of slow sometimes.

I am definitely going to make this. I bought Staymans and Galas
a couple days ago, I'll probably use a mixture of them.

This sounds rather good - plus I have plenty of apples at the moment.

I have to ask though (and will probably regret it -
If this is a "raw" apple cake, why does it require cooking in the oven?
Presumably 350°F @ 45 minutes would still cook the apple?

Yes, both have actively been building corrals of young studs
for years. Spawn's corral rivals her sisters' (but the colts
are unsure just who's really in charge.) One of Beta's drives a
Classic 'Stang; luckily her sensitive nose crinkles at the mix
of musk and car oil. Alpha's three are more boxer types; they'd
rather beat on each other in an attempt to show off than
actually do anything with her alone.

You're assuming these boy-toys can read. Given the dialogue
from several I've encountered, it's doubtful literacy is high
on their lists. I've learned a red-painted bat complete with
dents by the front door is much better at leaving an impression
on those cement cranium youth.

Raw refers to the state of the apples when they are used.
Yes, 35 minutes at 350 degrees will cook the apples.

I have a raw apple cake recipe (similar to yours but has sour cream in
it) and my family likes the batter raw. It's not easy to get it in the
oven sometimes...
