Default Bean soup with corn bread


Tonight I made soup from a package of Manischewitz four bean soup mix.
Right before the soup was finished I made a pan of cornbread using the
recipe on the Albers cornmeal box.

Assembled ingredients

Add the cup of cornmeal to the cup of flour

Add 1/4 cup of granulated sugar

One tablespoon of baking powder and a teaspoon of salt.

To one cup of milk mix in 1/2 cup of vegetable oil and a large egg
lightly beaten.
Add this mixture to the dry ingredients and stir just until combined.

Pour into a greased 8-inch square pan.

Don't get distracted while cooking the cornbread. It's still good and
didn't dry out too much.

You have inspired me to make bean soup with cornbread this coming weekend,
after very warm Midwestern weather it's finally to get colder...

:-)

I have plenty of homemade stock on hand and I'll think I'll throw some beer
into the mix (I use a crockpot)...I have several GIANT cans 'o PBR (Pabst
Blue Ribbon) that I bought to use in making beer bread.

I think a nice crusty beer bread would be great also.
