Can one freeze dishes made with custard and whipped cream? The custard
is of the Birds powder variety. -- He is not here; but far away The noise of life begins again And ghastly thro' the drizzling rain On the bald street breaks the blank day. |

Years ago I had a cousin who worked in a dairy and he used to with several quarts of whipping cream at a time. Mom used to whip it up and then freeze dollops of it on a sheet of foil, freeze and then wrap them. Later on she would take them out of the freezer and thaw them out. It worked. I am not sure about doing it with dishes. They would likely get soggy. |

I don't see why not, whipped cream freezes very well, just can't rewhip, sweeten, or flavor it later. Italian bakeries freeze both custard and whipped cream filled pastries all the time. I'm not sure about the egg free Birds powder but it should be easy to find out by trying a small amount. http://en.wikipedia.org/wiki/Custard_powder http://whatscookingamerica.net/Q-A/CreamFreezing.htm |

(never let your custard get too cold!) I'm assuming the OP was referring to something like a pie, trifle, or other prepared dessert, in which case you are correct. But it's quite possible to freeze custard itself in an ice cream machine. In fact, it's yummy. Bob |
