One big "sugar-free" shake. You can put the leftover amount - blender and all - in the freezer for a SHORT period if you like - it's more like ice cream that way. (Or just put the peeled, sliced bananas in the freezer in a simple container - THEN blend them after they're frozen. Either way, leftovers can be kept in the fridge.) Lenona. |

Only called for 1 cup of mashed ripe bananas which is about 2 overripe bananas. This was actually my grandmother's recipe, my mother and I have both made it successfully: 2 c. flour, sifted 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1/2 c. butter 1 c. sugar 2 eggs 1 c. mashed ripe bananas 1/2 c. chopped English walnuts Blend dry ingredients together. Add chopped nuts. Cream butter and sugar and blend with a spoon into dry ingredients. Blend in eggs and beat well. Stir in mashed bananas. Pour mixture into two greased loaf pans. Push the batter into the corners, leaving center slightly hollow. Bake at 350 degrees for 60-70 minutes until well browned. Cool well before serving. Jill |

Yes, usually when I discover an over ripe banana I don't have time to do anything with it just yet. Or I only have one banana and it's not enough to use. I peel them, throw them in a ziploc and stick in the freezer. When I have time I make something. Lynne |

Take out, defrost on the counter, use in whatever overripe banana recipe I'm using that day. |

It calls for 6 over-ripe bananas and as luck would have it, guess how many I have?????? :~) The only item I don't have to make the bread is sour cream; I'll have to get some in the morning. kili |
