Default perfect (or best) steak

An 18 mm thick rump steak is pretty easy to either pan-fry
or pan-roast to the OP's desired doneness.

One thing that's important (IMO) is to let it come up to room
temperature before cooking it.

I personally would season it with salt, pepper, and a drizzle
of olive oil.
