Apparently hors d'oeuvre's' are not served with an evening meal....

"It is suggested that there is no good reason for the inclusion of cold
hors d'oeure in a dinner menu, that their use is contrary to logic and
can only result in spoiling the taste of the soup which follows.

However an exception to this statement can be made in favor of caviare
which, when fresh, has a lightly nutty flavor and can favorably impress
the palate.

This observation also holds good for fine quality oysters provided that
they are accompanied by a very dry hock or white bordeaux wine.

But to repeat again, fish of all types and in all forms, salads and
marinated vegetables should be rigorously excluded from dinner menus.

On the contrary, however, the use of cold hors d'oeuvre is traditional
for luncheon menus where they are not only necessary but indispensable.

The variety and composition of items combined with correct and careful
presentation give a colorful appearance to the table and a favorable
impression to the guests on entering the dining room."

Fortunately Escoffier was not writing pour l'chez soi, but rather the
haute cuisine served in the more formal style, i guess being 'at home'
is excuse enough for a small spread of pre dinner snacks & drinks?

Im just that bored, i contemplated typing up the entire entry on "hor's
d'oeuvres" in Le Grand Cuisine.
But that was truly 'outside the work' more than i really felt up to.

What a nice treat, Joseph. I like Paul Whiteman. My parents left me an
extensive collection of 78 rpm singles and record sets which date back to
beginning in the early 1930s through the 1950s. There are many Paul
Whiteman reordings. I believe this is one of them. It was nice to hear.
