Default Crustless Pumpkin Pie - what's up with this?

From cooks.com:
CRUSTLESS POTATO (PUMPKIN) PIE

4 med. sweet potatoes
3 tbsp. plain flour
1 1/4 c. sugar
1 stick butter
1/4 c. oil
2 tsp. vanilla
1 tsp. baking powder
1/2 tsp. salt
3 eggs
1/2 c. milk

Combine all ingredients and pour into a deep dish. Bake at 350 degrees
for 45 minutes.

What the heck are baking powder and flour doing there? (No, I'm not
making this one; I'm just wondering.)

3tbs of flour will *not* make a crust.

You're right but 3 tbs of flour and some baking powder WILL ensure
that the "pie" will hold together when you slice it, remove the pieces
from the pie pan and servit on a dessert plate without disintegrating.

I don't think so. Not much flour for a crust. The recipe I used had 3
tbsp flour, too, but no baking powder.

I used a different recipe:
Crustless Pumpkin Pie
Source: allrecipes.com

1 1/4 cups sugar (I used 1 cup)
3 tablespoons all-purpose flour
3 eggs
2 cups canned pumpkin
3/4 cup evaporated milk (I used fat-free 'half and half')
1 1/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon (I used more cinnamon, some ginger, and a
little bit of cloves)

In a mixing bowl, combine the sugar and flour. Add eggs; mix well. Stir
in the pumpkin, milk, vanilla and cinnamon if desired; mix until well
blended. Pour into a greased 9-in. pie plate. Place pie plate in a
15-in. x 10-in. x 1-in. baking pan; add 1/2 in. of hot water to pan.
Bake at 350 degrees F for 50-55 minutes or until a knife inserted near
the center comes out clean.

Haven't tasted it, yet. Pictures at 11:00.

I can figure out the flour and baking powder, but it is all that butter
that baffles me.

There is only 1/2 C. milk (not specified as to what kind) for 3 eggs.
I suspect the flour and baking powder are to thicken the mixture as it
bakes, much like French Custard has a couple T. of flour and/or
cornstarch in it.

This seems to be a recipe for "Pumpkin Pudding." I can't see the
reason to do it crustless, since the small amount of crust in a once-a-
year celebratory pie wouldn't kill anyone. It obviously isn't a
celiac-free recipe.

Yes, that butter PLUS oil is very odd. Pumpkin pie filling (homemade)
doesn't have either one in it, or at least my recipe doesn't.

Sounds like a kind of pumpkin custard to me. I might have to give it a

And I still have figured out why we are calling a sweet potato pie a
pumpkin pie. There isn't one iota of any spice to make it begin to
taste like pumpkin!
