CRUSTLESS POTATO (PUMPKIN) PIE 4 med. sweet potatoes 3 tbsp. plain flour 1 1/4 c. sugar 1 stick butter 1/4 c. oil 2 tsp. vanilla 1 tsp. baking powder 1/2 tsp. salt 3 eggs 1/2 c. milk Combine all ingredients and pour into a deep dish. Bake at 350 degrees for 45 minutes. What the heck are baking powder and flour doing there? You're right but 3 tbs of flour and some baking powder WILL ensure that the "pie" will hold together when you slice it, remove the pieces from the pie pan and servit on a dessert plate without disintegrating. There is only 1/2 C. milk (not specified as to what kind) for 3 eggs. I suspect the flour and baking powder are to thicken the mixture as it bakes, much like French Custard has a couple T. of flour and/or cornstarch in it. This seems to be a recipe for "Pumpkin Pudding." I can't see the reason to do it crustless, since the small amount of crust in a once-a- year celebratory pie wouldn't kill anyone. It obviously isn't a celiac-free recipe. N. |

And I still have figured out why we are calling a sweet potato pie a pumpkin pie. There isn't one iota of any spice to make it begin to taste like pumpkin! |
