Default Pink Apple Crumb & Coconut Cream Pies

These are the two pies my daughter and I made for Thanksgiving up at the
folks' place. It was Alexis' first time making a pie by herself from start
to finish. We bought the crust at Trader Joe's since an emergency dentist
appointment for my mom cut us short on time, but it was delicious. The pink
came from pomegranate juice, which was her idea, and a good one. The
sweet-tart flavor was perfect contrast to the crumb top she made with dark
brown sugar.

The coconut pie turned out better than I could have hoped for too! I
"painted" melted chocolate on the baked/cooled crust before I put the
filling in to keep the crust nice and flakey...hate soggy crusts! I added
lots of toasted coconut, first on the chocolate, then in the filling, and
finally, on top of the pie just before serving. Cream of coconut added a lot
of coconut flavor and a certain decadence to the filling.

And, they were the first of the pies to be completely devoured, so that must
say something!

Anyone who is interested can see pics and such on my blog, and the recipe
for the coconut pie is already up.

Both of those pies sound great! I really like the idea of a
chocolate sealant and must remember that for all compatible pies!
