Default 10 lbs Turkey with 2 lbs Lard

I was looking for stuff on roasting chestnuts and I found this website
loaded with Mediterranean Diet recipes. Some were really neat
andnsome were mind boggling. I found this recipe for Christmas Turkey
(silly me! I thought it might be a mole).
Check out the site and check out the recipe. Why he calls it a diet
recipe I haven't a clue!

It might well taste good but you might as well deep-fry the thing.
No-one pretends that deep-frying is healthy or safe.

I see that most of the lard is used for basting and is discarded.
Perhaps
the turkey for which this recipe was developed is much, much leaner
than the American factory turkey.

"Diet" refers to a mode of eating, and not to a calorie-reduction
plan.
You can gain weight on the Mediterranean diet if you overeat, just
as on any other (despite the "lose 10 pounds in 5 weeks" eye candy).

The Meditteranean diet is just a way to eat, and isn't meant to be a "diet"
diet. They only started calling it that here after the nutritionists in
other countries started talking about why heart disease is rarer here.

Because if you are low carbing, high fat is not considered bad.

Om et al,
I am low 'everythining' it! Low fat (heart disease and gout) Low salt
(blood pressure) Low carbs (diabetes 2) Acid reflux (watch spices/
acids etc.) My dietician knows I'm a good cook and suggested I
explore ALL the Mediterranean countries. I am finding I really like
Moroccan and not so much Italian.

Bland and simple.

That is how I find most mid-eastern food to be, which is why I'm not
fond of Indian restaurants.

But, I see her point. :-)
