Default Refrigerator Soup


Today is the fourth day for the killer green beans, and a few other
things in the fridge. I don't care how "killer" the green beans are,
enough is enough, so I thought they'd be great in a soup. I wanted to
make just a little pot of soup. I didn't want to make a soup that
takes on a mind of it's own. You know, a soup that seems to add it's
own ingredients and expand before your very eyes.
This is also on my blah, dee blah blah, blog if you don't want to

I was the model of constraint. I only added to the soup what I
originally set out. The stock was made from the Thanksgiving turkey.

I cooked the onion and carrot until they started taking on some color.
Then I added a finely diced clove of garlic.

In went the stock and about a half cup of water and the green beans.

Soup bowls can be a little dangerous on plates so I place a little
square of a damp paper towel on the plate. The bowl placed on this
will not slide all over the plate and eventually in your lap.

If you want to get fancy schmancy and not have the paper towel visible
under the bowl, put the bowl on the paper towel and put a little
pressure on the bowl. You'll have a nice imprint of the bottom of the
bowl on the paper towel.

That gives you a nice guideline on which to start folding the paper
towel inward, all the way around.

While the soup was cooking the rice was set out to come to room
temperature. Spoon in a couple of spoonfuls of rice into the bowl.
This was leftover brown Jasmine.

Ladle the hot soup over the rice.
This is probably one of the best soups I've made with leftovers.
