Honeycomb Holiday Brittle
http://bakedchicago.typepad.com vegetable oil cooking spray 2 cups blanched hazelnuts 1 cup granulated sugar 1 cup light corn syrup pinch of kosher salt 1 tablespoon baking soda Coak baking sheet with cooking spray. Cook hazelnuts, sugar and corn syrup in saucepan over medium-high heat, stirring constantly, until sugar dissolves. Clip candy thermometer to side of pan and continue to cook, stirring occasionally, until mixture is golden brown (290F degrees). Stir in salt and baking soda and immediately pour onto prepared sheet (DO NOT spread). Let stand until hard, about 2 hours. Break into pieces and enjoy. |
