Another time-consuming candy recipe that's well worth the effort.

Vanilla Caramels

Recipe By : Damsel in dis Dress
Serving Size : 0 Preparation Time :0:00
Categories : Candies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound melted butter
2 pounds brown sugar
3/4 cup light corn syrup
2 cans sweetened condensed milk

1. Combine first three ingredients in large saucepan.
2. Gradually add sweetened condensed milk.
3. Cook, stirring constantly, for about 30 minutes, until the syrup
reaches, 245°F, or the Firm Ball Stage: (Drop a little of this syrup
in cold water and it will form a firm ball, one that won’t flatten
when you take it out of the water, but remains malleable and will
flatten when squeezed.)
4. Add 1-2 teaspoons vanilla.
5. Pour into buttered, waxed paper lined jelly roll pan.
6. Allow to set for 4-5 hours.
7. Tip onto waxed paper. Cut into squares and wrap each in waxed
paper.

Thank you! I absolutely LOVE vanilla caramels! They're by far my favorite
candy, and I'm always in search of the "best" recipe. Last time I made
them, they ended up hard as rocks. I'm going to have to try making them
again as soon as I get settled in my new abode in the next couple of weeks.

You're very welcome, Jinx. If you like them as much as I do, you'll
put on 20 pounds after making them. One of the reasons I don't make
them very often anymore. That, and that pesky diabetes. I used to

Diabetes, schmetes. I'm diabetic, too, and as awful as it's going to sound,
I don't let it get in my way of a good caramel! All within moderation, of
course. I'll let you know how they turn out.

I don't either, but I have this tendency to eat a LOT of them, so if I
have a craving, I usually just get one or two caramels from next to
the cash register at the drug store. They're not as buttery delicious
as homemade, but they keep me a tad healthier.

That's exactly how I do it, too. LOL I'll even go so far as to make special
trips just for them. My favorite by-the-register caramels at the moment are
the ones at Rybicki Cheese in the MOA. Out of my way, but worth the trip.
YUM. I wouldn't care if I never ate another piece of chocolate in my
lifetime as long as I never have caramel taken away!

Indeed I am! Originally from Rochester, currently in Roseville, but it'll
be Maplewood as soon as I get my crap out of here and over there. I should
be packing right now, but frankly, I just don't feel like it. Baby is
asleep and this is the only quiet time I've had all day.

I've put on 20lb this year, and was hoping to drop some. But now, oh no,
along you come with one of your recipes that I'm just going to have to make!
You do realize that in the interest of science I have to try this recipe?
And the rest of my family will too! You are responsible for a future sugar

Crash has had a left hip revision, but continues to dislocate.
They're talking about doing a more restrictive revision in January or
February.

Yum, that sounds like a keeper! If you cooked it to a less-hot
stage, I bet it would make a delicious caramel sauce.

I hope you make sure they sort out his meds at pre assessment. I'm sure they
can look back in his records and work out what works and what doesn't. You
both have enough to deal with post op, without putting up with that crap.

The meds seem to be working just the way they're supposed to now. He
sleeps like a rock for awhile after surgery, then abruptly wakes up
and is ready to go home. Well, at least on the day surgeries. Not
looking forward to another week long hospitalization.
