Reindeer Spice Cookies
http://bakedchicago.typepad.com 3 cups all-purpose flour 2 teaspoons ground cinnamon 2 teaspoons ground ginger 1 teaspoon ground cloves 1/2 teaspoon kosher salt 1/2 teaspoon ground nutmeg 1 cup butter, room temperature 1 1/2 cups dark brown sugar 1 teaspoon vanilla extract 2 eggs In medium bowl, mix flour, cinnamon, ginger, cloves, salt and nutmeg. Set aside. In large bowl, beat butter and brown sugar on medium speed with mixer until creamy. Beat in vanilla and eggs until fluffy. On low speed, beat in flour mixture. Divide dough in half. Flatten each half into 1/4-inch thick rounds. Wrap dough rounds separately and refrigerate for 1 hour. Preheat oven to 350F degrees. On floured working surface, roll half of dough at a time to 1/8-inch thickness. Cut with reindeer-shaped cookie cutter. Place 1 inch apart on ungreased baking sheets. Bake 9 to 11 minutes or until edges are lightly golden. Cool 1 minute and remove from baking sheet and place on cooling rack. Cool completely for at least 30 minutes. |
