Default The doorbell rang... (or supper tomorrow)

Unexpected but welcome... Our next door neighbor rang the bell early this
morning with a fairly large package in her hands. I welcomed her in, and
found that she had come to ask a favor. Her husband had bought a corned
beef and neither had any idea how to cook one. She asked if I would make a
supper for Sunday and she would bake a fresh peach pie, along with homemade
ice cream. (She is admittedly not much of a cook, but a hell of a baker.)
Bargain struck!

Now, we just had a corned beef a week or so ago, so thought I would finish
this one off a bit differently. It was a good size chunk of corned beef.
I simmered it with water to cover and a bottle of Guinness, with a healthy
dose of Penzey's Corned Beef Spice, a huge quartered onion, the bottom knob
of a stalk of celery, a head of garlic, and a 4" chunk of fresh horseradish
root. Allowed it to cool completely in the broth, then refrigerated in the
broth. I grated the remainder of the horseradish and mixed it with just
enough heavy cream to moisten, then into the refrigerator to "ripen".

Tomorrow I will dry the brisket and spread it generously with mustard, pack
it thickly with brown sugar mixed with a bit of allspice and clove. While
that is roasting to a deep brown glaze, I will simmer red potatoes,
carrots, chunks of rutabagas, and parsnips in the broth. At the last I will
add wedges of cabbage.

They'll love this. Meanwhile, I'll be waiting to dig into the pie and ice
cream. :-)
