Default My December 25th dinner will be...

A roasted cornish game hen and a split and roasted buttercup (not
butternut!) squash. Buttercup squash is similar to acorn squash and just as
tasty. The roasting times at 350F are roughly the same.

I'll bake some cornbread while the other two items sit for 20-25 minutes
(tented with foil).

I suppose I should accompany this with some sort of green vegetable. I have
frozen baby peas (hats off to Skyhooks! more for me! LOL) in the freezer. I
wasn't planning to make any sort of potatoes or gravy. And no, I won't be
making dessert. I do have vanilla ice cream in the freezer so if I get a
yen for something sweet there you have it.

I can only eat half of a cornish game hen and half of a (halved) butternut
squash for one meal. Add to that a slice of hot buttered cornbread and I'm
done. I'll have leftovers for another day. Of course I'll use real butter.
I've got some books for kicking back on that day; I love to read. It will
be a nice, quiet, peaceful December 25th for me. With good, simple food.

My cat Persia might get treats off the carcass of the game hen Happy

Mine will be leftovers. <g> I have to work.

I have a couple of friends I will cook for Saturday. Herbed shark steak
is the main entree.

I'll bake that ham I'd planned for dad and I on Sunday!

My house guests don't eat pork... and that's ok. :-)

I will be working too, Om.

We are having a potluck at work on Christmas Eve night. I am taking
the Bakesale Betty lemon bars, and Squeaks' Mixed Antipasto. At
least I think I am, LOL. It is easy to put together, and seems to go
over well.
I am working Christmas night as well..and it will probably be the
remains from the Christmas Eve feast. If not, I will bring something
from home....

My schedule after that is up and down. One night off, one night one,
one night off..and so forth. I won't have much time or energy to
cook much of anything, much less have company... Haven't decided what
to cook for myself, yet.

I'll just heat up leftovers! I don't worry about it. :-)
I'll be doing volunteer work early Christmas morning with the CPA Alumni
Association and serving breakfast to the County public servants on duty
along with other volunteers. Local PD, Sheriff's, EMS and the fire dept.
on duty until about 09:00. We'll be serving at the local police
station. I plan to make some sausage, cheese and egg breakfast tacos
with salsa as one of the choices. Other stuff will be donated.

Sis' and her family will sleep late so I'll go over there when my
volunteer shift is up. It should work out well.

I'm not really much concerned about food at this point. Just people!

I work nights so mornings are free...

Jill, I don't think I've mentioned how much I love your cornbread
recipe. When I was visiting a friend in west Texas a few months ago
who had a cafe, I made your cornbread a few times, and the guys there
loved it.

Tonight I'm making it to go with weird chili based on leftover rib
roast from last week, but it's on my little menu as Jill's cornbread.
