"Your" twice-baked potatoes were part of today's home run dinner at
Chateau Schaller, Leo. Thank you!

Seven-year-old Sam loved them and wanted them at snack/suppertime. She
was crushed when told they were history.

I shorted the count when I bought the bakers and bought only four.
That's when I decided to do twice-bakeds (then I'd have 8 pieces for 6
people). I followed your instructions almost faithfully and did the
add-ins this way: about 2/3 of the scooped insides were in one bowl,
the remainder in another. Both portions had some sour cream and half
and half added. The smaller portion got green onions and bacon in half,
bacon and cheese in the other half. The larger portion got green
onions, bacon, and cheese. Four halves were filled with the works, two
halves with the bacon and cheese only, and two halves with the green
onion and bacon only mixture.

I prepared them and set them in the auxiliary fridge on Tuesday
afternoon. Imagine my surprise when I was going to pop them into the
low oven for their 20-minute reheat as you recommended and realized that
the auxiliary fridge had become the auxiliary freezer. Damn! I put them
in at 325 with the roast for about 10-15 minutes, then pulled the roast
and upped the temp to about 375. I put them under the broiler to
finish.

Kind sir, they received rave reviews on *all* fronts and I've promised
Beck your instructions. She's never baked a potato.

Chris' comment was, "I can't believe you went to the work and bother of
accommodating the picky eaters, Mom." At that point, Jamie said, "You
mean me," and Beck intervened with "He could have meant cheeseless Dad."
I just basked in the compliments. '-)

Hopefully you've learned your lesson! We always make way too many for
one meal. They are so easy to pop into the microwave for a quick lunch
or snack.

Indeed, kind sir, this afternoon I purchased 5 *more* Bigass baking
potatoes with which to have another go, this time with Chris observing.
I will likely freeze some for eating another time. I took pics of the
first batch along the way (or at least most of the way) and Beck will
find those to be of great interest and help when she makes them. The
detailed explanation you provided will be invaluable to her. All of us

Likely passé for you, Toots, but my only other experience with making
them was ugly and Leo's instructions resulted in rave reviews all
'round. Including the short person.

Upon hearing that Barb makes these for her grandbebe and they were so
well received, I thought it might be something my own little one might
enjoy? Any suggestions of what you'd enjoy eating inside your twice

i don't think i've made them before, but it sounds like something to try.
i just got a toaster oven, and am hoping it would work for this.

They will do just fine in a toaster oven, Blake. Toaster ovens were
invented for 1-2 person baking.

I've never tried making them either and they've always looked and
sounded good. The sometimes serve them at work in the dining room.

You can also purchase them frozen, pre-made, in most grocery stores.

POTATOES with TREES
===================

potatoes (I like small ones for small people)
trees (broccoli)
butter
milk
green onions, chopped
white pepper
salt (maybe)
orange cheese, grated

Bake or microwave potatoes. We always microwave them. While they are
cooling (so you don't burn your hands), chop down trees and steam. Cut
potatoes in half. Depending on shape of potatoes, you want the widest
part with the skin on to go on the baking sheet. Use a spoon to hollow
out shells. Put shells on a baking sheet and insides into a large
enough bowl for potatoes and other ingredients. If a few shells don't
make it, that just leaves more stuffing. Add some butter, milk (half
and half is better, but not on our diet), onions and a little white
pepper. Mash. We like them very chunky. Taste. Add salt if it needs
it (and enough for the trees). If the trees are in long pieces, chop to
about 1/2". Add trees and mix the stuffing gently. Stuff shells and
put grated cheese on top of each one (or leave some without cheese if
some don't like it). Bake in medium (325F) oven until cheese melts. If
the potatoes cooled off too much, or you added cold ingredients (like
last night's trees out of the fridge), then cook a few minutes longer.

We got this recipe from our child care provider for our oldest, when he
was about two. She had problems getting her kids to eat certain things,
so she gave them funny names. We still call broccoli "trees" even
though our oldest is now 30.

Tell us if they are any good? I've never bought them.
I'm considering trying a similar recipe using yams.
